I used 4% fat Good culture cottage cheese but this recipe also works well with 2% cottage cheese. Although nonfat cottage cheese will work, the 2%-4% had more flavor and was sturdier.
The eggs are a key ingredient in this recipe so I do not believe it would work as an egg-free recipe.

- ¼ teaspoon Italian Seasoning
- ¼ teaspoon garlic powder
For the filling – optional but so good
- Mayonnaise
- Dijon mustard
- Sliced turkey breast
- Lettuce
- Tomato
Instructions
- Preheat the oven to 425°F and line a small rimmed baking pan with parchment paper. Spray the parchment paper with cooking spray to prevent sticking.
- Add the cottage cheese, eggs, and seasoning (Italian seasoning + garlic powder) to a medium bowl and whisk well to combine. Note: you could also blend the ingredients in a blender or pulse them in a food processor for a smoother texture.
- Spread the cottage cheese mixture in an 8×10, ¼-inch thick rectangle on the lined baking pan.
- Bake the flatbread in the preheated oven on the middle rack until firm and golden – about 25-30 minutes. Then remove it and allow it to cool for at least 10 minutes.
- Add your favorite fillings – we spread some mayo and mustard then added lettuce, tomato, and turkey slices to one end of the flatbread, then carefully rolled it up in some parchment paper. Finally, we used a sharp kitchen knife to cut it in half and it was DELICIOUS!
