Description
This viral cottage cheese flatbread recipe is made with 2 main ingredients, in one pan in under 30 minutes. It is a gluten-free, low-carb, high-protein flatbread recipe with over 30 grams of protein per serving!

For The Flatbread
- 1 cup cottage cheese – 2%-4%% fat
- 2 large eggs
- 1/4 teaspoon Italian Seasoning
- 1/4 teaspoon garlic powder
For the filling – optional but so good
- Mayonnaise
- Dijon mustard
- Sliced turkey breast
- Lettuce
- Tomato
Instructions
- Preheat the oven to 425°F and line a small rimmed baking pan with parchment paper. Spray the parchment paper with cooking spray to prevent sticking.
- Add the cottage cheese, eggs, and seasoning (Italian seasoning + garlic powder) to a medium bowl and whisk well to combine. Note: you could also blend the ingredients in a blender or pulse them in a food processor for a smoother texture.
- Spread the cottage cheese mixture in an 8×10, 1/4-inch thick rectangle on the lined baking pan.
- Bake the flatbread in the preheated oven on the middle rack until firm and golden – about 25-30 minutes. Then remove it and allow it to cool for at least 10 minutes.
- Add your favorite fillings – we spread some mayo and mustard then added lettuce, tomato, and turkey slices to one end of the flatbread, then carefully rolled it up in some parchment paper. Finally, we used a sharp kitchen knife to cut it in half and it was DELICIOUS!
Notes
- Use a good quality cottage cheese that is 2%-4% milkfat like Good Culture brand.
- Make sure not to spread the cottage cheese mixture too thin or it will not be sturdy enough. 1/4 inch in thickness is good.
- Ovens vary, so check the flatbread at around 20 minutes, then continue cooking as needed. You may need to turn the pan around so it becomes nice and golden on all sides.
- Store leftover flatbread in a covered container in the fridge for up to 24 hours.
