This ground beef sweet potato bowl is loaded with protein and has the perfect balance of sweet and savory flavors. It is topped with hot honey which ties it all together and makes this viral beef bowl a quick, healthy main meal that takes under 30 minutes!

The first time I saw the viral ground beef sweet potato bowl was on Instagram and it was everywhere. At first I thought that it looked so simple, so why is it viral? Until I tried it. The combination of the cooked ground taco meat mixed with perfectly air fried sweet potatoes, creamy avocado and cottage cheese all topped with a drizzle of hot honey was amazing!

This cottage cheese sweet potato beef bowl is packed with the perfect amount of protein and sweet and savory flavors that makes it wonderfully satisfying, macro-friendly and it’s easy to make!

You all know I LOVE a good bowl recipe like this breakfast bowl and burger bowl, so this beef bowl was right up my alley.

Ingredients you’ll need for this cottage cheese sweet potato beef bowl

You only need a few simple ingredients to make this viral beef, sweet potato, cottage cheese bowl. Here is what you’ll need:

  • Ground beef – I like to use 93/7 grass-fed ground beef but any ground beef or ground turkey will work in this recipe.
  • Sweet potato – you’ll need 2 medium sweet potatoes, peeled and chopped. You could also use sweet potato fries if you prefer. Not as healthy but just as good. 
  • Avocado – fresh diced avocado gives this healthy bowl a nice dose of healthy fats and fiber.
  • Cottage cheese – any cottage cheese will work. I prefer 4% milkfat cottage cheese like Good Culture. 
  • Taco seasoning, salt and pepper – adds flavor to the meat and potatoes. 
  • Olive oil + avocado oil – healthy oils are used to cook the meat and potatoes. 
  • Mike’s hot honey – the best hot honey out there that takes this bowl to a whole new level of deliciousness.

How to make the hot honey ground beef sweet potato bowl

Here is a summary for how to make this viral ground beef bowl with sweet potato with step by step photos to help guide you. 

Seasoned uncooked sweet potato in an air fryer.

Step 1: Peel and chop the sweet potato, season it and add it to the air fryer.

Air fried sweet potato cubes in an air fryer basket.

Step 2: Air fry the sweet potatoes until tender and golden – about 15-20 minutes.

Ground beef, taco seasoning and tomato paste in a skillet.

Step 3: Cook the ground beef in a skillet with oil, add the tomato paste and taco seasoning and toss.

Step 4: Cook and simmer for a few minutes, then remove from the heat.

Been taco meet, air fryer sweet potato cubes, avocado and cottage cheese in a bowl with a drizzle of honey on it.

Step 5: Build your beef bowls – add some of the ground beef to a shallow bowl along with some of the cooked sweet potato, cottage cheese, and diced avocado. Top everything with a drizzle of hot honey, seasoning with salt and pepper if needed and enjoy!

Expert tips for the best ground beef sweet potato bowl

  • Cut the sweet potato into even sized pieces so they all cook at the same time. 
  • Use good quality ground beef – I recommend 93/7 grass-fed ground beef. You can also use ground turkey but I found that ground beef was just better in this recipe. 
  • Season the beef well – I used taco seasoning, oil and tomato paste to season the ground beef  and it was packed with flavor. 
  • Cottage cheese – any type of cottage cheese will work here but 4% small curd cottage cheese was my favorite. If you don’t like the texture of cottage cheese you can blend it before adding it to your bowl. 
  • Add the avocado last since it can turn brown quickly
  • Use a small drizzle of hot honey since a little bit goes a long way. 

Storage

Store leftover meat, potatoes and cottage cheese in an airtight container in the fridge for up to 4 days.

Description

This viral ground beef sweet potato bowl with hot honey is the perfect balanced, high protein bowl that makes a satisfying dinner that takes under 30 minutes to make!


Ingredients

Scale
  • 2 medium sweet potatoes – peeled and chopped into 1-inch pieces
  • 1–2 tablespoons of olive oil or olive oil spray
  • 1 teaspoon kosher salt
  • ⅓ teaspoon ground black pepper
  • 1 pound lean ground beef
  • 2 teaspoons avocado oil
  • 2 tablespoons taco seasoning
  • 2 teaspoons tomato paste 
  • 1 medium ripe avocado- peeled and diced
  • ⅔ cup cottage cheese
  • drizzle of hot honey


Instructions

Cook the sweet potatoes

  1. Preheat the air fryer to 400°F. 
  2. Toss the sweet potatoes in a bowl with olive oil, salt and pepper and any other seasoning you like. 
  3. Transfer the seasoned sweet potato cubes to the air fryer in a single layer (a little overlapping is okay) and cook for 15-17 minutes, tossing them in the basket halfway through cooking. 

Cook the ground beef

  1. Heat a skillet to medium heat on the stovetop, add the oil, then add the ground beef breaking it up in the pan. 
  2. Add in the tomato paste and taco seasoning, add a sprinkle of salt if needed, and toss and cook until the meat is all browned and no longer pink. Set aside. 

Assemble the bowls

  1. Divide the cooked ground beef and sweet potatoes between 2-3 bowls, top with some cottage cheese, diced avocado and hot honey. 
  2. Serve and enjoy!

  • Use good quality ingredients for the best flavor. 
  • Dice the sweet potato into even sized pieces for even cooking. 
  • Use olive oil spray to reduce the calories
