I have been loving the cottage cheese craze lately. I have made cottage cheese bagels, cottage cheese scrambled eggs, cottage cheese buffalo chicken dip, and now this high-protein cottage cheese pizza crust! If you like thin crust pizza then you will love this recipe!

Ever since I shared this Greek yogurt protein pizza I have wanted to create a flourless lower-carb version, so I tested it with just cottage cheese and eggs and it worked!
The cottage cheese pizza crust turned out thin, but golden and firm enough to hold some toppings. It is also a flavorful pizza crust if you add some seasoning ( I used garlic and Italian seasoning). My kids even loved it!

Best cottage cheese to use for this pizza crust
I used a 2% milkfat cottage cheese (Good Culture brand). 4% milkfat cottage cheese (Daisy’s) also worked great! Fat-free cottage cheese is not recommended since the fat solids help the ingredients bind together and create a much more flavorful pizza crust.

We kept this one plain with just cheese but I also made a pepperoni pizza version that my family loved just as much! You don’t want to go crazy with the toppings but add whatever you like to customize your own version.
Ingredients for cottage cheese pizza crust
You only need 2 main ingredients (yes, that’s it) to make this incredible pizza crust. I added some extra flavor with some seasoning to make it even more delicious. Here is what you will need to make it!
- Cottage cheese – like I mentioned, I used a 2% milkfat cottage cheese but 4% milkfat will also work. Select a good quality cottage cheese like Good Culture or Daisy’s.
- Eggs – you only need 2 large eggs in this recipe. I grabbed them straight from the fridge. Room temperature will also work but they do not have to be room temperature.
- Seasoning – the seasonings are optional since this pizza crust is already flavorful from the cottage cheese + eggs combo. Here is what I added to bump up the flavor even more: Italian seasoning, garlic powder, and salt.

How To Make Cottage Cheese Pizza Crust
This is such an easy low-carb pizza to make and it blows me away every time! Here is a summary of the steps for how to make it. Find the full recipe with complete step-by-step instructions in the recipe card below.
Step 1: Combine the cottage cheese with the eggs and seasoning (if using) in a medium bowl and mix well to fully combine. I used a whisk to do this step and it came together in seconds.
Step 2: Pour the cottage cheese mixture onto a parchment paper-lined baking sheet and spread it into an even layer like the shape of a pizza. A rubber spatula is the best tool for this step. It will be liquidy but it is supposed to be like that.
Step 3: Place the pizza crust into a 350°F preheated oven and bake it on the middle rack for 35-45 minutes until it is set and golden.
Step 4: Let the pizza crust cool for a few minutes then spread the sauce evenly over the crust.
Step 5: Add the cheese and any additional toppings you like.
Step 6: Pop the pizza back into the oven and bake it for 7-10 minutes until the cheese is nice and melted. Let it cool slightly, then slice and serve
Pro tip: the thinner you spread the cottage cheese mixture the quicker the pizza crust will cook but it will not be as sturdy. I suggest spreading it to about ¼-inch thick, which was just about perfect.
Expert Tips For The Best Results
- Use good quality cottage cheese and good quality eggs since those are the main ingredients in this pizza recipe and will impact the flavor of the pizza crust.
- No need to drain or blend the cottage cheese since the liquid helps bind the crust and give it moisture.
- Line the baking sheet with parchment paper or the pizza crust will stick to the pan. You can also spray the parchment paper with cooking spray to double-ensure it does not stick.
- You can spread the mixture into a circle shape like a traditional pizza, or a square or rectangle. Even use it as a wrap instead!
- Allow the crust to cool as suggested in the recipe since it will stick to the parchment paper if you try to release it too soon after baking. TRUST ME!
- Go light on the toppings – this is thin-crust pizza so it cannot hold a lot of toppings. I simply used pizza sauce and cheese but have also made this a delicious pepperoni pizza that my kids also loved!
- Adjust the cooking time as needed – since ovens vary, I suggest cooking the crust as directed in this recipe but check it as it cooks and adjust as needed.
- Do not skip the cooling time – I know it is hard to wait but the cooling time in this recipe is critical. It allows the crust to firm up and become more pliable.
Storage
Cottage cheese pizza crust is best eaten right after you make it. If you do have leftovers, they can be stored in an airtight container in the refrigerator for up to 3 days. Reheat leftovers in a pan in the oven at 350°F until the cheese is melted again or in the air fryer.

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Mix the cottage cheese and eggs in a medium bowl then add the seasoning (garlic, Italian seasoning, salt and pepper) and mix well.
- Pour the cottage cheese mixture in an even layer in a circle shape or rectangle shape onto the lined pan, about ¼ inch in thickness.
- Bake the crust on the middle rack of the preheated oven for 35-40 minutes or until golden and set. Once the pizza is done, remove it from the oven and let it cool for 5-10 minutes. Then add your toppings, and return the pizza to the oven for 5-10 more minutes until the cheese is melted and the edges are nice and golden.
