You are going to love this low-carb, easy 2-ingredient, cottage cheese pizza crust. This delicious recipe offers the perfect alternative to traditional crusts, allowing you to enjoy a satisfying pizza experience without the extra carbs. With just 3 net carbs per serving, it’s a pizza you can eat every day!

Cottage cheese pizza crust with melted cheese on it topped with basil leave and a bowl of red pepper flakes behind it.

I have been loving the cottage cheese craze lately. I have made cottage cheese bagels, cottage cheese scrambled eggs, cottage cheese flatbread, and now this high-protein cottage cheese pizza crust! If you like thin crust pizza then you will love this recipe!

It has 12 grams of protein and 3 net crabs per serving, which is amazing especially if you are watching your calories and trying to focus on higher protein meals.

Ever since I shared this Greek yogurt protein pizza I have wanted to create a flourless lower-carb version, so I tested it with just cottage cheese and eggs and it worked!

The cottage cheese pizza crust turned out thin, but golden and firm enough to hold some toppings. It is also a flavorful pizza crust if you add some seasoning ( I used garlic and Italian seasoning). My kids even loved it!

If you need a dairy-free easy pizza crust then check out this chickpea flour pizza crust that is just as easy to make and is also gluten-free and low-carb.

Best cottage cheese to use for this pizza crust

I used a 2% milkfat cottage cheese (Good Culture brand). 4% milkfat cottage cheese (Daisy’s) also worked great! Fat-free cottage cheese is not recommended since the fat solids help the ingredients bind together and create a much more flavorful pizza crust.

    Pizza topping ideas

    • Pizza sauce
    • Pesto sauce
    • Pepperoni
    • Thinly sliced onions and peppers
    • Sliced black olives
    • Thinly sliced mushrooms
    • Shredded mozzarella cheese

We kept this one plain with just cheese but I also made a pepperoni pizza version that my family loved just as much! You don’t want to go crazy with the toppings but add whatever you like to customize your own version.

Ingredients for cottage cheese pizza crust

You only need 2 main ingredients (yes, that’s it) to make this incredible pizza crust. I added some extra flavor with some seasoning to make it even more delicious. Here is what you will need to make it!

Ingredients for low carb cottage cheese pizza crust in bowls with labels over each ingredient.
    • Cottage cheese—as I mentioned, I used a 2% milkfat cottage cheese, but 4% milkfat will also work. Select a good-quality cottage cheese like Good Culture or Daisy’s.
    • Eggs – you only need 2 large eggs in this recipe. I grabbed them straight from the fridge. Room temperature will also work but they do not have to be room temperature.
    • Seasoning – the seasonings are optional since this pizza crust is already flavorful from the cottage cheese + eggs combo. Here is what I added to bump up the flavor even more: Italian seasoning, garlic powder, and salt.

How To Make Cottage Cheese Pizza Crust

This is such an easy low-carb pizza to make, and it blows me away every time! Here is a summary of the steps. The full recipe with complete step-by-step instructions is in the recipe card below.

Whisked cottage cheese, eggs and herbs in a glass bowl with a metal whisk next to it.

Step 1: Combine the cottage cheese with the eggs and seasoning (if using) in a medium bowl and mix well to fully combine. I used a whisk to do this step and it came together in seconds.

Cottage cheese mixture formed in a circle on a lined baking pan.

Step 2: Pour the cottage cheese mixture onto a parchment paper-lined baking sheet and spread it into an even layer like the shape of a pizza. A rubber spatula is the best tool for this step. It will be liquidy but it is supposed to be like that.

Thin crust cottage cheese base pizza baked on a lined pan.

Step 3: Place the pizza crust into a 350°F preheated oven and bake it on the middle rack for 35-45 minutes until it is set and golden.

Thin pizza crust partially cooked with sauces-read on it on a lined baking sheet with the spoon on the baking sheet next to it.

Step 4: Let the pizza crust cool for a few minutes then spread the sauce evenly over the crust.

Thin crust pizza topped with pizza sauce and shredded mozzarella before being cooked on a lined baking pan.

Step 5: Add the cheese and any additional toppings you like.

Cooked cottage cheese pizza on a lined baking sheet with melted cheese on it.

Step 6: Pop the pizza back into the oven and bake it for 7-10 minutes until the cheese is nice and melted. Let it cool slightly, then slice and serve

Whole thin crust cheese pizza toped with basil with plates and a towel in front of it and a bowl of parmesan and red pepper behind it.

Pro tip: the thinner you spread the cottage cheese mixture the quicker the pizza crust will cook but it will not be as sturdy. I suggest spreading it to about ¼-inch thick, which was just about perfect.

Expert Tips For The Best Results

    • Use good quality cottage cheese and good quality eggs since those are the main ingredients in this pizza recipe and will impact the flavor of the pizza crust.
    • No need to drain or blend the cottage cheese since the liquid helps bind the crust and give it moisture.
    • Line the baking sheet with parchment paper or the pizza crust will stick to the pan. You can also spray the parchment paper with cooking spray to double-ensure it does not stick.
    • You can spread the mixture into a circle shape like a traditional pizza, or a square or rectangle. Even use it as a wrap instead!
    • Allow the crust to cool as suggested in the recipe since it will stick to the parchment paper if you try to release it too soon after baking. TRUST ME!
    • Go light on the toppings – this is thin-crust pizza so it cannot hold a lot of toppings. I simply used pizza sauce and cheese but have also made this a delicious pepperoni pizza that my kids also loved!
    • Adjust the cooking time as needed – since ovens vary, I suggest cooking the crust as directed in this recipe but check it as it cooks and adjust as needed.
    • Do not skip the cooling time – I know it is hard to wait but the cooling time in this recipe is critical. It allows the crust to firm up and become more pliable.

    Storage

Cottage cheese pizza crust is best eaten right after you make it. If you do have leftovers, they can be stored in an airtight container in the refrigerator for up to 3 days. Reheat leftovers in a pan in the oven at 350°F until the cheese is melted again or in the air fryer.

    FAQs

Is this cottage cheese pizza crust gluten-free?

This recipe, as written is fully gluten-free.

Why is my pizza crust sticking to the pan?

If the crust sticks to the pan, make sure to use parchment paper, spray it with cooking spray (if needed), and allow it to cool.

Can I use Greek yogurt instead of cottage cheese?

I did test this recipe with Greek yogurt and although it did work, the crust was too flat and crumbly and just not the right texture or flavor.

Hand pulling a slice of cheese pizza from the whole pizza.

    Ways to serve pizza

One of the best ways to make a complete meal with pizza is to serve a fresh salad with it. We like to serve this cottage cheese pizza crust with kale salad, or an Italian chopped salad. My kids also love it with some homemade fries.

    Description

This 2-ingredient low-carb cottage cheese pizza crust is quick to make and is a delicious thin crust pizza that has just 3 net carbs per serving.

    Ingredients

    Scale
    • 1 cup cottage cheese – 2%-4% fat
    • 2 large eggs
    • ½ teaspoon garlic powder
    • ¼ teaspoon Italian seasoning
    • Pinch of salt and pepper

    Instructions

    1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
    2. Mix the cottage cheese and eggs in a medium bowl then add the seasoning (garlic, Italian seasoning, salt and pepper) and mix well.
    3. Pour the cottage cheese mixture in an even layer in a circle shape or rectangle shape onto the lined pan, about ¼ inch in thickness.
    4. Bake the crust on the middle rack of the preheated oven for 35-40 minutes or until golden and set. Once the pizza is done, remove it from the oven and let it cool for 5-10 minutes. Then add your toppings, and return the pizza to the oven for 5-10 more minutes until the cheese is melted and the edges are nice and golden.
    5. Remove the pizza from the oven and let it cool for 10 minutes before you slice and serve it.

    Notes

    • Use a good quality cottage cheese like Good Culture or Daisy’s. Nancy’s is also really good.
    • Allow the pizza crust to cool before you add the toppings and after it is fully done cooking.
    • Store leftover pizza in an airtight container in the refrigerator for up to 3 days. Reheat portions in the oven or air fryer at 350°F until warmed through.

I halved the recipe because for one person half was plenty! I topped it with lots of meat, some green pepper and cheese. It was so good!

Hi Tracy, Yes you can use egg whites in place of the eggs you would need two egg whites per one egg.
