As you know, I love a no bake dessert recipe and I love dates like these date snickers, date bark and these delicious date cookies. So, once I saw this new viral date s’mores recipe I had to try it!

Ingredients You’ll Need
Here are the simple ingredients you’ll need to make this amazing healthy s’mores recipe.

- Medjool dates – I used Medjool dates but have also tried this recipe with Deglet dates that are smaller, lower in sugar and have less calories for a calorie-deficit friendly dessert that is still satisfying.
- Marshmallow fluff – I used a healthier marshmallow fluff – Toonie Moonies which you can buy at Whole Foods, Sprouts or on Amazon for the gooey marshmallow center. You can also use regular marshmallow fluff you can find at almost any grocery store.
- Graham crackers – I am gluten free right now so I used simple mills sweet thins but any graham crackers will work.
- Coconut oil – I used a little bit of coconut oil to melt with the chocolate to make it easier to spread over the dates.
- Chocolate chips – I love Lily’s brand chocolate chips but you can use any brand you like.

How to make this viral date s’mores recipe
Here is a summary of the steps for how to make this viral s’mores dates recipe with step-by-step photos.

Step 1: Slice each date lengthwise without cutting all the way through and remove the pit. Open the date and press it flat onto the parchment paper lined pan. If needed, place another piece of parchment on top and flatten it with the bottom of a glass or mason jar. Arrange the dates about 2 inches apart.

Step 2: Spread about 1 tablespoon of marshmallow fluff over each date.

Step 3: Press 1–2 sweet thins or pieces of graham cracker into the center of each one.

FAQ’s
I used pitted Medjool dates since they are plump and perfectly sweet. You could also try Deglet dates that are less sweet, smaller and have less calories if you need to keep this a lower calorie treat. Although these s’mores dates are about 100 calories each so they are a pretty low calorie anyways.
The marshmallow fluff in this recipe creates that nice gooey center we all love in a true s’mores but you can leave it out if you prefer to.
I used Simple Mills Sweet Thins to keep this recipe gluten free but you can use any type of graham crackers or even biscoff cookies.

- 12–15 Simple Mills Sweet Thins or graham crackers
- ½ cup dark chocolate chips
- 1 teaspoon coconut oil
