Welcome to Pinch Me Good!

Welcome to Pinch Me Good — your go-to spot for quick, easy, and healthy recipes anyone can make and everyone will love!

I’m Amy, a home cook, certified nutrition coach, and busy mom who believes healthy eating should be simple, flavorful, and doable — even on your busiest days. I started Pinch Me Good to show that cooking at home doesn’t have to be complicated or time-consuming.

Most people skip cooking because it feels intimidating or takes too much time — but it doesn’t have to! That’s why my recipes focus on real food made simple — think 5-ingredient meals and 15-minute dishes that make eating healthy, fast, fun, and totally achievable.

More About Me:

  1. My cooking philosophy: it must be delicious but also quick, easy to make and healthy!
  2. I love Jesus! I grew up going to church and recently re-dedicated my life to Christ. It has changed me in ways I never imagined, and I give him the glory every day, in everything I do!
  3. I am a TRIPLET! I have two sisters, Sarah and Tara and we are fraternal triplets. We also have three older brothers but they are not TRIPLETS, haha.
  4. When I was growing up my parents fed us all kinds of healthy foods, including lentil soup, and I, LOVED IT, which is where my healthy eating habits started.  We never ate a lot of processed foods or fast foods and I haven’t eaten fast food in over 20 years!
  5. I used to work as a project manager at an insurance company.  I was a project manager for 12 years and I loved it.  I am so grateful for everything I learned during that time that has led me to this amazing job!
  6. I became a Nutrition Coach 4 years ago to help people become the best versions of themselves!
  7. I love to eat a big salad for at least one meal per day to help me get in all the VEGGIES! Plus, salads are easy throw together in a pinch!
  8. I am a former athlete! My husband and I have run over 8 marathons, over 20 half marathons, and countless 5k and 10 races. He also runs ultra-marathons and has even won a few! We still love to work out and run!
  9. We live in North Carolina with our two boys, Cameron and Samuel, and our doggie, Frankie.
  10. Matt and I have been married for almost 19 years, and together for 23 years!
