I am a die hard food lover and cooking fanatic. Mother of two rambunctious little boys and wife to an obsessed ultra runner. I myself am also a runner but my goal is to run a lot so I can consume as much delightful food as possible. As you can imagine, in a house full of boys and an athlete, I cook a lot and I love it! My kids and husband are all picky eaters but I enjoy cooking for them and also creating food that I like to eat – yes the healthy things but also really good things!
I am also a vegetarian, health foodie and insist that my food not only tastes good but is good for me. In fact, I live for those “Pinch me good” moments. You know those times in your life that are so memorable that you need someone to pinch you since it feels like you are dreaming? I want my food to bring you that same feeling with each recipe you try and each bite you take.
A big endeavor, I know, but since changing to a vegetarian diet, it has awakened my cooking passion and opened my palate and experiences with food in ways I could have never imagined. It has inspired me to cook to combine ingredients I would have never tried, to create the most amazing recipes I have ever tasted. The food I make puts the greens and beans in the spotlight while sending my taste buds those incredible food “Pinch me good” moments I crave.
