    Hi!  I’m Amy, and I am so glad you found your way to Pinch Me Good!

    I created Pinch Me Good to share my love for nutritious, delicious food with you all.  Why?  Because I want you to know that eating healthy doesn’t have to be boring.  Eating healthy and living a healthy lifestyle can still be tasty and fun.  It’s true, I swear!

    I am a Certified Nutrition Coach, so guiding people to eat healthy and feel great is my life’s passion.

    When it comes to healthy eating, I am obsessed with fruits and vegetables of any kind.  Does that sound weird?  Maybe, but it’s my passion.  When I go to the farmers market or produce section of any grocery store, I simply light up and get so excited!

    I wish I knew exactly what my parents did to get me to love veggies so much but at this point, they are not spilling the beans or are probably really not sure, lol!  All I know is veggies are everything for our bodies to function properly and my wish is that more people would eat more veggies. Including some of my family members, who I will not name but you know who you are, haha.

    I have met a lot of people that never eat veggies and claim they hate kale but once they tried my Easy Kale Salad with Lemon Dressing or this Mashed Butternut Squash they were forever changed.  So now that is my mission.

    So what is Pinch Me Good?  Pinch Me Good is a food blog that shares easy healthy-inspired, feel good recipes that anyone can make and everyone will love and want to eat. Eating better to feel better is the name of my game.  I feel great all the time, I am never tired and I have so much energy everyday!

    Why?  I include lots of fruits and veggies and lean meats and hearty proteins in my daily diet. That’s it! So simple and so delicious! I really just want everyone to feel as good as I do but still get to enjoy their food.  That is what I am all about!

    Sharing nutritious but still tasty, delicious food that is good for you, simple to make and satisfies everyone from vegan, vegetarian, gluten-free, dairy-free to meat lovers

    Let’s not forget the occasional healthy desserts.

    black bean browniesDon’t be fooled, although I am a Nutrition Coach, love my veggies, and follow a healthy lifestyle, on the weekends you will still find me whipping up these Avocado Black Bean Brownies or these Healthy Chewy Oatmeal Chocolate Chip Cookies.  Because life without dessert does not work for me.  Everything in balance I SAY!

    I also love a good snack and I entertain a lot since I have a big family, so you will find some healthy but crazy good snacks and crowd-pleasers like Homemade Classic Hummus or Sweet and Spicy Baked Cauliflower Wings.

    It is really very easy to include lots of delicious fruits and veggies in your daily diet and I am on a mission to show you how. I will also share tips on how to:

    • Pick the best veggies
    • How to cut vegetables like butternut squash and zucchini
    • The best ways to clean and store your veggies so they taste good and last longer
    • Shop for the cheapest seasonal produce
    • How to get your kids to eat their veggies!
    • How to cook amazing recipes using your convenient air fryer or instant pot
    • And so much more!

    Oh, and if cooking scares you or you are still learning to cook, that is totally okay.  There are a lot of recipes that you can make, some that require no cooking at all like these No-Bake Chocolate Energy Bites or this Chickpea Chicken Salad.

    A Little Bit More About Me

    In October 2017, I started Pinch Me Good in hopes to start sharing my love for healthy recipes with you all.  At the time I had recently moved to a new state (I live in North Carolina), became a remote worker, had 2 very little kids (ages 1 and 3) and had just moved into a new house.

    It was a lot of change all at once so I felt I needed something to take my attention off of everything that was new and put it back into what I loved, which was cooking. I never really intended for it to become what it has today but it has been a very big blessing in my life so far.

    In 2018 I decided to leave my remote job that I was miserable at and take the plunge and completely change careers.  I think some people thought I was crazy to leave my very well paying, remote job that I was pretty good at to pursue something else.  But quite honestly, I was miserable at that job and needed a big change.

    I wanted to do something I was passionate about and that was food and nutrition, hands down.  So I became a Certified Nutrition Coach and started on my journey ( and still going) to make Pinch Me Good my business and my new career.

    So far so good!  It has been and continues to be a lot of work, but work I absolutely enjoy!  I am so excited to bring you even more great recipes, engage with you and hopefully help you all on a journey to eat better, feel better and live longer more fulfilling lives!

    Here is a little bit more about me and my family and how I got to where I am today.

    I grew up in a big family (6 kids) in a small town in CT.  I am a triplet, I have two sisters and I also have 3 brothers, who are not triplets (haha).  You could say my mom kind of cheated since she had 3 at once.

    Growing up we did not have a lot but my parents always made sure we were very involved in a lot of activities and had everything we needed including healthy, homemade meals like every day.  As busy as my parents were, they still cooked delicious food for us and we ate dinner together every night.  There were always veggies on table and I always ate them.

    Not sure how my mom did that, maybe she has magic powers.  My grandmother also cooked from scratch and my aunts always made our beautiful birthday cakes.  Food, family, and gathering together were a huge part of my childhood and something I want to do for my kids as well.

    I went to college for business and continued on to have a successful career as a Project Manager at an insurance company for over 12 years.  It was an incredible experience and opportunity where I learned a lot.  I will forever be grateful for all of the people I worked with and the skills I gained along the way.

    I met my amazing husband in 2002 and was immediately smitten with him! We were and still are a very active couple.  Running, hiking and biking will likely be something we do well into retirement.  I really cannot see us ever not doing those things.  We traveled a lot, Hawaii and Colorado being our favorite places to travel to.

    We have also both run a lot of marathons (I have run 8 in total) and Matt ran and still runs ultra marathons. Yes, he is a little crazy but that is why I love him so much! He has even won a few.

    In 2006 we got married and it was literally one of the greatest days of my life!!!

    Then in 2013, our lives were changed forever when we had our first little boy, Cameron, who is now 7.

    In 2015 our family got a little bigger with the birth of our second son, Samuel, who is now 5.

    They are the loves of our lives and have brought us so much joy!   They are now 5 and 7 and keep us very busy and always on our toes!
