They taste very similar to Starbucks egg bites except I made them better using only a few ingredients and just baked them in the oven. Starbucks uses the sous vide cooking method which is great but requires special equipment and more time.

Add the eggs, cottage cheese, salt, and pepper to a high-speed blender.

Blend on high until fully combined.

- Blend the egg mixture – the process of blending the eggs with the cottage cheese is what creates these beautifully smooth and fluffy bacon egg bites that have the perfect texture.
- Grease the pan – Be sure to generously coat your pan with cooking spray to prevent the eggs from sticking. I used a high-quality olive oil spray for this.
- Don’t overfill – Make sure not to fill the muffin cups to the top. You want to fill them just a little bit more than halfway since the eggs rise as they cook.
- Cooking time – Since ovens can vary, start checking your cottage cheese egg bites at the 20-minute mark and adjust the cooking time as needed. Mine were perfectly done in about 22 minutes.

These Cottage Cheese Egg Bites are easy to make with just a few simple ingredients. They resemble Starbucks egg bites and are made with eggs, cottage cheese, bacon, and chives. Great for meal prep, 14 grams of protein per serving and so good!
Ingredients
- 8 large eggs
- ¾ cup cottage cheese
- ⅓ cup shredded cheddar cheese
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ⅓ cup cooked, chopped bacon
- 2 tablespoons chopped fresh chives
Instructions
- Preheat the oven to 350°F and spray a 12-cup silicone or metal muffin pan with cooking spray.
- Add the eggs, cottage cheese, salt, and pepper to a high-speed blender and blend on high until smooth and combined.
- Divide the egg mixture evenly between the muffin cups filling each one a little more than halfway full. Make sure not to overfill them. Top each egg bite with some bacon and chives.
- Bake the egg bites for 22-25 minutes until the eggs are set and the edges are golden. Remove and let cool.
- Carefully remove the egg bites from the pan and enjoy!

- I suggest using a silicone muffin pan for these egg bites since it is much easier to pop them out once they are done.
- Make sure not to overfill the muffin cups with the egg mixture. A little more then halfway is fine. You should have just enough to fill 12 muffin cups.
- Bake until the egg bites are set in the middle and golden around the edges. In my oven, they tool about 22 minutes at 350°F.
