Ingredients
- 3–4 tablespoons creamy tahini paste
- The juice of 3 lemons – about 3-4 tablespoons
- 2 (15 oz) cans of chickpeas drained and rinsed- I used low-sodium organic chickpeas
- 2 cloves of garlic – chopped
- 4 tablespoons extra virgin olive oil – plus more for topping
- 2–3 tablespoons of water
- Kosher salt and black pepper
Instructions
- Add the tahini, lemon, chickpeas, garlic, olive oil, salt and pepper and 1 tablespoon of water to a high-speed blender or food processor.
- Cover and pulse on high until smooth and creamy, about 60 seconds. Add more water 1 tablespoon at a time to get it nice and smooth if needed.
- Transfer to a serving bowl and top with a drizzle of olive oil, more chickpeas and a sprinkle of paprika and parsley.
- Serve with fresh cut veggies like carrots, cucumber and celery and some crunchy pita chips.
