I used a similar method that I used for these air fryer green bean fries to make it easier to coat the zucchini slices so you do not need to coat each one separately.

Ingredients
- 1 medium zucchini
- ¼ – ½ teaspoon kosher salt
- 2 tablespoons avocado oil
- 3 tablespoons grated parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon Italian Seasoning
- Cracked black pepper – optional
Instructions
- Prepare the zucchini – line a baking sheet with a few clean paper towels. Use a mandolin slicer set to 1.55mm or a sharp kitchen knife to slice the zucchini into chips. Place the zucchini slices in even layers on the lined baking sheet and sprinkle them with some salt. Let sit for 10 minutes. DO NOT SKIP THIS STEP!
- Season – Combine the parmesan cheese with the garlic powder, paprika, and Italian seasoning in a medium bowl. Dry the zucchini slices well by patting them with more paper towels to remove even more moisture. Add the zucchini slices to a large bowl and coat them in the oil, then in the parmesan herb seasoning.
- Cook – preheat the air fryer to 345°F and spray the basket with olive oil cooking spray to prevent sticking. Working in batches, place the coated zucchini in an even layer into the air fryer basket and cook for 12-14 minutes, checking the chips as they cook and removing any that are done, continue cooking the rest since some may cook faster than others. Immediately place the cooked chips onto a clean paper towel to cool and crisp up even more.
- Devour – serve immediately and enjoy!
