- Strawberries – I recommend using fresh strawberries. You want to look for deep red, vibrant berries. If you need to use frozen then those will work as well.
- Arrowroot starch – this is used to help thicken the strawberry filling. You could also use cornstarch.
- Orange juice and zest – fresh orange juice and zest are recommended for the best flavor. You could also use lemon juice and zest.
- Coconut sugar – is used to enhance the sweetness of the strawberry filling. You could also use white sugar or brown sugar.
- Oats – are used to add texture to the crumble topping. Old-fashioned oats work best but rolled oats will also work fine.
- Oat flour – I used organic oat flour but have also tested this recipe using gluten-free all-purpose flour and regular white flour and those worked great. The flour makes the cookie crumble topping more crumbly, which is so good.
- Pecans or walnuts – add a nice nutty flavor and crunch to the topping.
- Brown sugar – light brown sugar, just a bit adds the perfect hint of sweetness to the crumble topping. You could also use coconut sugar as well.
- Butter – regular unsalted butter, or you can use plant-based butter for a vegan version of this recipe. Coconut oil will work as well.
- Vanilla – real vanilla extract for that warm, cozy flavor that is great in any baked recipe.

This fuss-free strawberry dessert is so easy to make in just a few simple steps. Here is a summary of how to make it.
Clean, dry, and hull the strawberries, then cut them in halves or quarter them and add them to a mixing bowl along with the other filling ingredients.
Toss everything together then pour the filling into the prepared pie dish.
Combine the oats, oat flour, nuts, brown sugar, vanilla, salt, and melted butter in a medium mixing bowl and toss it all together.

Ingredients
For the strawberry filling
- 5 cups sliced strawberries – about 2 pounds
- 1.5 tablespoons arrowroot starch
- 2 tablespoons coconut sugar
- 1 teaspoon orange zest
- 1 tablespoon orange juice
For the cookie crumble topping
- 1 cup old-fashioned oats
- ⅔ cup oat flour or gluten-free all-purpose flour
- ½ cup chopped pecans or walnuts
- ¼ cup packed brown sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ¼ teaspoon kosher salt
- ⅓ cup butter melted butter
Instructions
- Preheat the oven to 375°F and grease a 9-inch pie dish or 8×8 baking dish with some butter or cooking spray.
- Clean the strawberries, dry them well, then hull them, and cut them into halves or quarter them. Add the cut strawberries to a medium-sized mixing bowl along with the rest of the filling ingredients and toss everything together.
- In a separate bowl combine the oats, flour, nuts, sugar, cinnamon, vanilla, and salt and toss. Pour in the melted butter and combine into a wet crumble.
- Use your hands or a spoon to evenly arrange the crumble on top of the strawberries then place the strawberry crumble in the preheated oven on the middle rack and bake it for 35-40 minutes until the edges are bubbly and the top is golden brown.
- Once the crumble is done baking, remove it from the oven and let it cool for 10 -15 minutes. Then serve it warm with vanilla ice cream or whipped topping.

- Fresh strawberries are best in this crumble but frozen will work as well.
