Description
No bake smashed date s’mores are made with a smashed date layered with marshmallow fluff, graham crackers and melted chocolate. No campfire needed for these no bake smashed date treats everyone will love!

- 12 Medjool dates
- 1/2 cup marshmallow fluff
- 12-15 Simple Mills Sweet Thins or graham crackers
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Prep the dates: Line a baking pan with parchment paper to prevent sticking since dates can become sticky. Slice each date lengthwise without cutting all the way through and remove the pit. Open the date and press it flat onto the parchment paper lined pan. If needed, place another piece of parchment on top and flatten it with the bottom of a glass or mason jar. Arrange the dates about 2 inches apart.
- Add the filling: Spread about 1 tablespoon of marshmallow fluff over each date. Press 1–2 sweet thins or pieces of graham cracker into the center of each one.
- Melt the chocolate: Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth and melted, about 60–90 seconds.
- Top with chocolate: Spoon about 1 tablespoon of melted chocolate over each date, spreading it to cover the marshmallow and graham cracker layer. Sprinkle with crushed graham crackers, if desired.
- Chill: Freeze for 15–20 minutes, until the chocolate is set. Serve and enjoy!
Notes
- You can use Medjool dates or Deglet dates in this recipe.
- Any type of marshmallow fluff will work. I used Toonie Moonies brand.
- Any type of graham crackers will work in this recipe. I used Simple Mills Sweet Thins to keep this s’mores recipe gluten free.
- Store leftovers in an airtight container in the fridge for up to 5 days or in a freezer safe container in the freezer for up to one month.
