- Strawberries – you’ll need fresh strawberries cut into slices. Frozen strawberries will not work in this recipe. I used about 12-15 medium size strawberries.
- Peanut butter – creamy, drippy peanut butter where the only ingredients are peanuts and salt that have been well stirred. Note: if the peanut butter is too oily then it will take much longer to set.
- Dark chocolate chips – I chose to use dark chocolate chips but any chocolate chips will work. You could also use a dark chocolate bar. You will need about 10 ounces.
- Coconut oil – we added a small amount of refined coconut oil to the chocolate to make it nice and silky smooth, making it easier to pour and spread.

Ingredients
- 12–15 medium strawberries thinly sliced
- ½ cup creamy peanut butter
- 10 ounces dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line a medium baking sheet with parchment paper and arrange the sliced strawberries into a rectangle shape. I placed them 5 across and 7-8 down.
- Pour and spread the peanut butter in a thin layer over the strawberries and place the bark in the freezer for 20-30 minutes until the peanut butter layer is set and not longer sticky.
- Add the chocolate chips and coconut oil to a microwave-safe dish and microwave it in 30-second intervals, stirring it in between until fully melted, about 1-2 minutes.
- Pour the melted chocolate over the bark and spread it out evenly into a thin layer. Work fast since the chocolate will start to set pretty quickly.
- Return the strawberry chocolate bark to the freezer to set, for about 20 minutes.
- Remove and cut into pieces.
