Easy Frozen Protein S’mores Bars – 5 Ingredients

These frozen protein s’mores bars are an easy protein-packed sweet treat you can whip up anytime! They are great straight from the freezer and taste just like traditional s’mores except we made them into ice cream bars.

We love s’mores anything, especially this ninja creami protein ice cream. So of course, I had to try my hand at making the viral protein smores bars. And let me tell you they are 10/10!

These s’mores protein bars only have five ingredients and require no baking, which is my kind of dessert. To make them, all you have to do is mix and assemble them, then freeze them until they are set. You can freeze them for 1-2 hours for a more gooey, traditional s’mores filling or overnight for a more ice cream texture. No campfire needed!

Either way, they are just simply amazing!!

We love them straight from the freezer for a quick protein-packed dessert.

Ingredients For Frozen Protein S’mores

You only need 5 simple ingredients to make these amazing s’mores bars. Here is what you’ll need.

  • Graham crackers – any graham crackers will work. I used honey grahams. 
  • Cool Whip – just one tub of Cool Whip or Coco Whip
  • Protein powder – a good-tasting vanilla or chocolate protein powder
  • Chocolate chips – I used Lilys but any chocolate chips will work
  • Coconut oil – to melt with the chocolate chips to help make the chocolate more spreadable.

  • Mixing bowls
  • Rubber spatula
  • 8×8 pan
  • Parchment paper

How To Make No Bake Protein S’mores Bars

Here is the process with step-by-step photos of how to make these protein-packed s’mores. Get the complete list of recipe ingredients and instructions in the recipe card at the bottom of this post.

Step 1: Line an 8×8 metal pan and layer in 9 graham crackers.

Melted chocolate in a large glass measuring cup with a rubber spatula covered in chocolate in front of it.

Step 2: Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30-second intervals until fully melted.

Step 3: Pour and spread half of the melted chocolate evenly over the graham crackers.

Cool whip mix with protein powder in a glass bowl with a green rubber spatula in it.

Step 4: Combine the Cool Whip and protein powder in a medium mixing bowl.

Step 5: Spread the cool whip mixture evenly over the melted chocolate layer.

Step 6: Pour and spread the remaining chocolate over the cool whip layer then add the rest of the graham crackers.

Chill until set. About 2 hours for a gooey filling and 8 hours or overnight for a more ice cream-like texture. Then remove and cut into squares.

Tips & Tricks for the best results

  • Use an 8×8 metal pan lined with parchment paper. This made it easier to lift the s’mores out of the pan to cut them. 
  • Don’t skip the chocolate layers since that is the glue that holds these bars together. 
  • Press the final layer of graham crackers into the chocolate to help it stick better. 
  • Freezer for 1-2 hours for more of a gooey filling and overnight for more of an ice cream texture. 

How To Store Protein S’mores Bars

These protein s’mores bars store great in a freezer-safe container in the freezer so you can easily pull them out when that sweet craving hits. 

Recipe Variations

  • Dairy-free – use vegan graham crackers, dairy-free chocolate chips, vegan protein powder, and coco whip. 
  • Gluten-free – use gluten-free graham crackers and gluten-free chocolate chips which can be found at most grocery stores. 
  • Chocolate s’mores bars – use chocolate protein powder in place of vanilla protein powder.

FAQs

What is the best protein powder to use in this recipe?

I used Clean Simple Eats vanilla protein powder but any good-tasting vanilla or chocolate protein powder will work great!

What type of graham crackers work best for s’mores

I used regular honey graham crackers since they taste great and are good to work with. I also tried this recipe with vegan graham crackers from Whole Foods and they were equally delicious.

Is this recipe kid-friendly?

Yes, my kids devoured these s’mores bars. They loved the chocolate and vanilla versions too!

Description

These frozen protein s’mores bars are the best protein-packed treat ever! They are made with 5 simple ingredients and require no baking. We love them straight from the freezer for a quick light dessert that everyone loves!


Ingredients

Scale
  • 18 graham crackers
  • 10 ounces chocolate chips
  • 1 teaspoon coconut oil
  • 1 tub Cool Whip or Coco Whip 
  • 1.5 scoops (about 45 grams) of vanilla protein powder


Instructions

  1. Line an 8×8 pan with parchment paper
  2. Arrange 9 graham crackers in the bottom of the pan in an even layer. 
  3. Add the chocolate chips and coconut oil to a microwave-safe dish and microwave in 30 second intervals until fully melted. 
  4. Pour and spread half of the melted chocolate over the graham crackers and allow to set – about 5-10 minutes. 
  5. Add the cool whip to a medium bowl and combine it with the protein powder, making sure to fully mix it. 
  6. Spread the cool whip mixture over the set chocolate layer then pour and spread the remaining chocolate over the cool whip. 
  7. Top with the remaining 9 graham crackers and place in the freezer for 2-8 hours. 
  8. Once the bars are ready, remove them from the freezer, carefully lift them out of the pan, and cut them into squares. 

Notes

  • Any good-tasting protein powder will work great!
  • I recommend using an 8×8 metal pan for the best results
  • Store leftovers in a freezer-safe container in the freezer for up to 5 days and enjoy them straight from the freezer.
