- Protein pancake mix – I used Kodiak Power Cakes chocolate chip mix but any protein pancake mix will work.
- Egg whites – I used carton egg whites but fresh egg whites will work as well. The egg whites replace water or milk in this pancake recipe and add more protein. They also help the pancake become fluffy as it cooks.
- Pumpkin puree – just ¼ cup of real pumpkin puree (not pumpkin pie filling) which helps create this amazing warm fall flavor and smooth texture to the pancake bowl. You can replace the pumpkin with ¼ cup mashed bananas or applesauce. See variations below.
- Toppings – chocolate chips, maple syrup, berries, pecans or walnuts, or nut butter.

How to make a protein pancake bowl

Step 1: Combine the pumpkin, egg whites, and pancake mix in a mixing bowl.
Step 2: Mix well into a thick pancake batter.

Instructions
