This protein-packed pumpkin pancake bowl has just 3 ingredients and can be whipped up in under 5 minutes. It packs 18 grams of protein per serving for a healthy, easy breakfast that is customizable and kid-friendly!

- 1/4 cup protein pancake mix – I used this one
- 1/4 cup pumpkin puree
- 1/4 cup egg whites
- Chocolate chips – optional
- Maple syrup – optional
Instructions
- Add the pancake mix, pumpkin, and egg whites to a medium-sized mixing bowl and stir well to combine into a semi-thick pancake batter. Fold in some chocolate chips, if desired.
- Spray a microwave-safe bowl with cooking spray and spread the pancake batter in the bowl.
- Microwave on high for 90-120 seconds until a toothpick inserted in the middle of the pancake comes out mostly clean with some wet crumbs on it.
- Serve immediately topped with your favorite pancake toppings like more chocolate chips and maple syrup.
Notes
- Make sure you spray the bowl with cooking spray to prevent sticking and use a microwave-safe bowl.
- Any pancake mix will work. I used this one.
- I recommend cooking the pancake bowl for 90 seconds and continuing to cook as needed since microwaves vary.
- The protein per serving will vary based on the type of pancake mix used in the recipe.
