Description

This protein-packed pumpkin pancake bowl has just 3 ingredients and can be whipped up in under 5 minutes. It packs 18 grams of protein per serving for a healthy, easy breakfast that is customizable and kid-friendly!


Ingredients

  • 1/4 cup protein pancake mix – I used this one
  • 1/4 cup pumpkin puree
  • 1/4 cup egg whites
  • Chocolate chips – optional
  • Maple syrup – optional

Instructions

  1. Add the pancake mix, pumpkin, and egg whites to a medium-sized mixing bowl and stir well to combine into a semi-thick pancake batter. Fold in some chocolate chips, if desired. 
  2. Spray a microwave-safe bowl with cooking spray and spread the pancake batter in the bowl. 
  3. Microwave on high for 90-120 seconds until a toothpick inserted in the middle of the pancake comes out mostly clean with some wet crumbs on it. 
  4. Serve immediately topped with your favorite pancake toppings like more chocolate chips and maple syrup. 

Notes

  • Make sure you spray the bowl with cooking spray to prevent sticking and use a microwave-safe bowl. 
  • Any pancake mix will work. I used this one
  • I recommend cooking the pancake bowl for 90 seconds and continuing to cook as needed since microwaves vary.
