Biscuits are my kids’ favorite with any meal. Almost every day I hear, “Mom, can you make biscuits?” When I tried my hand at creating these homemade Greek yogurt biscuits they were a hit with the whole family!
Typically making biscuits requires a lot of mixing, kneading, waiting for dough to rise, baking and so on but these Greek yogurt biscuits can be made quickly and cooked in under 30 minutes.
But the best part about this Greek yogurt biscuit recipe is that it only has 2 simple ingredients and you don’t have to use any butter! We used the same Greek yogurt + flour method like we did with these bagels and the results were amazing!

Ingredients For Greek Yogurt Biscuits
You only need a few simple ingredients to make these healthy protein biscuits. Here is what you’ll need:

- Greek yogurt – I used nonfat plain thick Greek yogurt but 2% or full fat Greek yogurt will also work. If the yogurt looks liquidy then strain it or use a slotted spoon when measuring it out before combining it with the flour.
- Self-rising flour – I found that King Arthur unbleached self-rising flour yielded the best results for this biscuit recipe but any self-rising flour will work.
- Salt (optional)- kosher salt is optional for elevated flavor. I also like to sprinkle the biscuits with some salt after they are done baking.

How to make homemade biscuits with Greek yogurt
Here is a summary for how to make this homemade biscuits recipe with step by step photos and instructions.

- Add the Greek yogurt and flour to a medium bowl.

- Mix well into a chunky dough.

- Roll the dough onto a well floured surface and knead it with your hands for 1 minute until it forms a smooth ball of dough.

- Use your hands to press the dough into a rectangle oblong shape that is about ¾ inch thick.

5. Fold the top of the dough halfway towards the center then fold the bottom half towards the center. Turn the dough about 90 degrees and repeat 3 times.

6. Finally, press the dough using your hands into a rectangle that is ¾ inch thick. Use a floured biscuit cutter, glass or round ring to cut even size biscuits. You should get 9-10 biscuits using a 2 and ¾ size cutter.

7. Place the cut biscuits onto a lined pan, make sure they are touching. Spray with cooking spray or brush the tops with melted butter.

8. Bake in a preheated 400°F oven on the top or middle rack until puffed up and golden, about 17-22 minutes.
Once the Greek yogurt biscuits are done baking, remove them from the oven and allow them to cool on the pan for 10-15 minutes. Serve warm with butter or jam and enjoy!

- Greek yogurt: Use a thick, plain variety (like Fage). Nonfat or full-fat both work. Adjust flour if dough is sticky (add more flour) or dry (add more yogurt).
- Self-rising flour: A mix of all-purpose flour, baking powder, and salt. Buy ready-made or make your own (1 cup AP flour + 1½ tsp baking powder + ¼ tsp salt).
- Measure accurately: Use proper measuring cups for both flour and yogurt.
- Skip the rolling pin: Press dough with your hands for fluffier, better-rising biscuits.
- Cut correctly: Press biscuit cutter straight down—don’t twist, or they won’t puff as much.
- Roll excess dough: You can knead and roll out extra dough and continue cutting biscuits until you have 9-10 biscuits cut.
- Place biscuits close together: Arrange so they touch on the pan; this helps them rise taller while baking.

Ingredients
- 2 cups plain Greek yogurt – like the Fage brand
- 2 cups self-rising flour (unbleached)
- 1 teaspoon kosher salt (optional)
- Olive oil cooking spray or melted butter – optional for topping
Instructions
- Preheat the oven to 400°F and line a small baking sheet with parchment paper.
- Add the Greek yogurt and flour to a mixing bowl and mix well to combine into a chunky dough.
- Turn the biscuit dough onto a well-floured surface and knead it using your hands for about 60 seconds until a smooth round ball of dough forms.
- Use your hands to press the dough into a ¾ inch thick rectangle. Fold the top half over towards the center, then fold the bottom half over towards the center so the two ends are touching but not overlapping. Turn the dough about 90 degrees and repeat the same steps. Do this one more time then use your hands to press the dough into a ¾ inch thick rectangle.
- Dip the biscuit cutter (I used a 2 and ¾ inch size cutter) into some flour, then place it onto the dough and press to cut your biscuits. Note: do not twist the biscuit cutter or it will cause the dough to deflat. Place the cut biscuits onto the lined baking pan, and make sure they are touching. This will help them rise more as they cook.
- Spray the biscuits with cooking spray or brush lightly with melted butter and sprinkle with salt if desired for extra flavor. Bake on the middle or top rack of the oven until puffed up and golden – about 17-23 minutes. Note: for hotter ovens use the middle rack for less hot ovens use the top rack.
- Once the biscuits are done cooking, remove them from the oven and allow them to cool for 10-15 minutes.
- Serve warm with butter or jam and enjoy!

- Use a thick plain Greek yogurt like the Fage brand.
- Use unbleached self-rising flour
- Allow the biscuits to cool for 10-15 minutes before serving. They will continue cooking as they cool.
