Greek Yogurt Biscuits

Description

These easy 2 ingredient Greek yogurt biscuits are just as tasty as the traditional version but are made without butter. We replaced the butter with thick Greek yogurt for a healthier, lighter and super delicious biscuits recipe anyone can make and everyone will love!


Ingredients

  • 2 cups plain Greek yogurt – like the Fage brand
  • 2 cups self-rising flour (unbleached)
  • 1 teaspoon kosher salt (optional)
  • Olive oil cooking spray or melted butter – optional for topping


Instructions

  1. Preheat the oven to 400°F and line a small baking sheet with parchment paper. 
  2. Add the Greek yogurt and flour to a mixing bowl and mix well to combine into a chunky dough. 
  3. Turn the biscuit dough onto a well-floured surface and knead it using your hands for about 60 seconds until a smooth round ball of dough forms. 
  4. Use your hands to press the dough into a 3/4 inch thick rectangle. Fold the top half over towards the center, then fold the bottom half over towards the center so the two ends are touching but not overlapping. Turn the dough about 90 degrees and repeat the same steps. Do this one more time then use your hands to press the dough into a 3/4 inch thick rectangle. 
  5. Dip the biscuit cutter (I used a 2 and 3/4 inch size cutter) into some flour, then place it onto the dough and press to cut your biscuits. Note: do not twist the biscuit cutter or it will cause the dough to deflat. Place the cut biscuits onto the lined baking pan, and make sure they are touching. This will help them rise more as they cook. 
  6. Spray the biscuits with cooking spray or brush lightly with melted butter and sprinkle with salt if desired for extra flavor. Bake on the middle or top rack of the oven until puffed up and golden – about 17-23 minutes. Note: for hotter ovens use the middle rack for less hot ovens use the top rack. 
  7. Once the biscuits are done cooking, remove them from the oven and allow them to cool for 10-15 minutes. 
  8. Serve warm with butter or jam and enjoy!

Notes

  • Use a thick plain Greek yogurt like the Fage brand. 
  • Use unbleached self-rising flour
  • Allow the biscuits to cool for 10-15 minutes before serving. They will continue cooking as they cool. 
  • Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 30 seconds wrapped in a paper towel. 
  • Freeze in a freezer safe container for up to 3 months. Defrost on the counter for a few hours or overnight in the refrigerator.
