Ingredients
Cilantro Lime Vinaigrette
- 2 cups fresh packed cilantro
- ¼ cup extra virgin olive oil
- ¼ cup fresh squeezed lime juice
- ½ a ripe avocado
- 2 tablespoons apple cider vinegar
- 2 teaspoons maple syrup
- 1 tablespoon dijon mustard
- ½ teaspoon kosher salt
- Pinch of ground black pepper
Instructions
- Add all of the dressing ingredients to a high speed blender and blend on high until smooth and creamy.
- Serve immediately on your favorite salad or store in a mason jar fitted with a lid in the refrigerator for later.
Notes
Select a good quality olive oil for making salad dressings of any kind – this is so important since olive oil is such a huge component to salad dressings.
