Here is a creative yet very easy and might I say FUN recipe to make and try; Delicious and Easy Edamame Potstickers. Cute little wonton wrappers filled with an amazing flavorful filling made up of edamame, garlic, soy sauce and sesame oil. Cooked and steamed until the bottoms are nice and crispy brown with a nice soft and semi chewy potsticker outer layer. The creamy edamame filled center just bursts with flavor and top it off with a drizzle of teriyaki sauce and sprinkle of chili powder and these babies are what’s for a special and surprising dinner tonight!
I know what you’re thinking…..these look incredibly tasty but how much work is it to actually sit there and fill and wrap all of these plus cook them. Way, way easier than you think. I made about 20 of them (the recipe will make 30-40) and it only took me 10 minutes to fill them all and wrap them up. The second FUN part was actually cooking them to get the nice crispy bottoms and steaming them for 1-2 minutes until they were nice and soft. A possibly PERFECT date night in idea with the hubby, boyfriend, best friend, sister, mom, kids…anyone really. It’s just fun to make fillings and create, create, create!

Even if your husband or whomever you want to make these with is not into cooking, they will enjoy making these. For some reason it is just so satisfying to let your creative juices flow in the kitchen, get your hands a little messy and create the food all on your own. It will taste better for sure since you made it!

Because you know how I roll with making sure the food I am making and eating has nutritional value. SO Important to me and it should be to you as well but let’s be real, we still want it to taste good!!! Plus we want to feel good after we eat it so this recipe is really another winner for all of us!!!
Here is a little bit about how EASY these were to make:
Cook the edamame. I used frozen shelled edamame and you can either steam them or cook them in the microwave. Place them in the food processor with some garlic, soy sauce, sesame oil, salt and pepper. Pulse it all up and your super flavorful filling is done.
Then I simply placed the filling into the center of a wonton wrapper (store-bought), wet the sides with some water and wrapped them up. To wrap them up you just pull the corners together and pinch the top to make creases. They are adorable and every time I made one I just had to say “How cute!”.
I added them to a semi-hot pan with some oil and cooked them for about a minute or two to get the bottoms nice and crispy, hence the “POTSTICKER” title. Then I turned the heat down, added a little water, covered them and let them steam for 1-2 minutes and that was it! See? I told you they were EASY TO MAKE!
- 30-40 store-bought wonton wrappers
- 2 cups, shelled and cooked edamame
- 3 cloves of garlic, minced
- 1/4 cup soy sauce
- 3-4 tablespoons sesame oil
- Salt and pepper
- Extra soy or teriyaki sauce for drizzling
Make the edamame filling:
- Place the cooked edamame, minced garlic, soy sauce, 2 tablespoons sesame oil, salt and pepper into the food processor and pulse until it forms a filling type of mixture. It should only take a few pulses. If the mixture looks too dry then add in a little water 1 tablespoon at a time.
Assemble the potstickers:
- Lay the wonton wrappers on a flat surface. Place a small bowl of water next to them along with the edamame filling.
- Put one of the wrappers on the flat surface, add about half a tablespoon of the edamame filling to the center. Using your finger, wet the edges of the wrapper with some water.
- Pull up the corners and press them together, using your fingers crease the top so it stays together and you have made a potsticker.
- Continue with this process until you have used up all of your filling. Makes about 40 potstickers.
Cook the potstickers:
- Heat up a medium-large pan on the stovetop with 1 tablespoon of sesame oil, place some of the potstickers into the pan, enough to cover the bottom. Let those cook for 1-2 minutes until you start to see the bottoms get browned.
- Reduce the heat to low, add 1/4 cup of water to the pan, cover it and let the potstickers steam for 1-2 minutes. Remove them, place them on a plate and cook the rest until they are all done!
Drizzle with some more soy or teriyaki sauce and ENJOY! I also sprinkled them with a little chili powder for color and they were so GOOD!!!
Vegan Option: Use vegan wonton wrappers. I have found them at Whole Foods and on Amazon or you can use homemade.
