    These protein-packed cottage cheese egg bites are so fluffy and flavorful. They resemble Starbucks egg bites but are much healthier and inexpensive. One serving packs 14 grams of protein. You can whip them up quickly and enjoy them as a fast grab-and-go healthy breakfast all week long!

    You all loved these cottage cheese scrambled eggs so much that I had to bring you these NEW cottage cheese egg bites. They taste very similar to Starbucks egg bites except I made them better using only a few ingredients and just baked them in the oven. Starbucks uses the sous vide cooking method which is great but requires special equipment and more time. 

    Now, you can enjoy your homemade sous vide-style egg bites at home, ready in about 30 minutes!

    These egg bites with cottage cheese are made with just a handful of simple ingredients you probably already have.  They require just 10 minutes of prep work and cook in about 22 minutes! You will want to add them to your weekly meal prep since they also store and reheat beautifully.

    I love to have these ready to go for busy mornings as I am hurrying my boys out the door! Grabbing a couple of these egg bites ensures that I am getting a higher protein, quick breakfast that is ready to go, which is such a time saver!

    Why put cottage cheese in eggs?

    Adding cottage cheese to egg bites offers the benefit of a creamy, fluffy texture that comes from blending it with the eggs. It also provides a nice protein boost without affecting the flavor—you won’t even taste the cottage cheese! Blending the eggs and cottage cheese into a custard-like mixture ensures that the original texture of the cottage cheese is completely transformed.

    Ingredients and Substitutions

    • Cottage cheese – there is no substitute for cottage cheese. I used 4% milkfat cottage cheese
    • Eggs – large whole eggs are best but carton eggs will also work. You will need about 16oz of liquid eggs like egg beaters if you are not using fresh eggs. 
    • Cheddar cheese – just a bit of shredded cheddar cheese adds even more protein and flavor. 
    • Salt and pepper – used to season the egg bites
    • Cooked, chopped bacon – adds even more protein and flavor. 
    • Fresh chopped chives – I love the addition of the fresh chives for that mild herby, onion flavor.

    How To Make Egg Bites With Cottage Cheese

    Here is a summary of how to make these amazing high-protein cottage cheese egg bites.

    Blend on high until fully combined.

    Evenly divide the cottage cheese egg mixture between prepared muffin cups of a 12-cup muffin pan. Top each one with some bacon, cheddar cheese and chives.

    Bake the egg bites in a preheated oven at 350°F for 22-25 minutes. Until the eggs are set and the edges are golden brown.

    Let them cool, then carefully release them from the pan and enjoy! Cottage cheese egg bites are best eaten warm but can also be enjoyed cold, straight from the fridge. See storing and reheating tips below. 

    Recipe Variations For Cottage Cheese Egg Bites

    Here are some delicious variations to try!

    • Bacon and gruyere – switch up the cheddar and use gruyere cheese to make these egg bites more like the Starbucks version. 
    • Roasted red pepper egg bites – add some chopped roasted red bell peppers for another Starbucks copycat egg bites variation. 
    • Spinach and feta cheese – we love to add sauteed spinach and feta cheese to add more fiber and nutrients. 
    • Broccoli and cheddar – similar to this mini quiche, broccoli, and cheddar is a classic combination that would be amazing in this recipe. 

    Expert tips for the best results

    • Choose the right pan – I found that a silicone muffin pan works perfectly for this egg-baked recipe. Silicone is ideal because it allows the egg bites to pop out effortlessly. While a metal muffin pan will also work, it may be a bit trickier to remove the egg bites. To make it easier, you can also line the metal pan with muffin liners.
    • Blend the egg mixture – the process of blending the eggs with the cottage cheese is what creates these beautifully smooth and fluffy bacon egg bites that have the perfect texture. 
    • Grease the pan – Be sure to generously coat your pan with cooking spray to prevent the eggs from sticking. I used a high-quality olive oil spray for this.
    • Don’t overfill – Make sure not to fill the muffin cups to the top. You want to fill them just a little bit more than halfway since the eggs rise as they cook. 
    • Cooking time – Since ovens can vary, start checking your cottage cheese egg bites at the 20-minute mark and adjust the cooking time as needed. Mine were perfectly done in about 22 minutes.

    Storing and reheating baked egg bites

    Egg bites can be stored in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 15-20 seconds or until warmed through. 

    Serving Suggestions

    These egg bites are fantastic on their own, delivering a satisfying dose of protein (14 grams)  in every serving. Pair them with fresh fruit for a well-rounded, protein and fiber-packed meal. For a heartier option, you can serve them with a side of asparagus, chopped tomatoes, or toast. Alternatively, chop them up and wrap them in a tortilla for a more substantial breakfast.


    FAQs

    How can you tell when the egg bites are done? 

    They will be set in the middle and golden around the edges. You can also stick a toothpick in the center of one of the egg bites and if it comes out mostly clean then they are done. 

    Is there anything I can use in place of the cottage cheese?

    Since cottage cheese is a key ingredient in this recipe, I wouldn’t substitute it for anything or omit it. It gives the egg bites the best taste and texture and you really cannot taste it. 

    Do Starbucks egg bites have cottage cheese?

    Yes, cottage cheese is listed as one of the ingredients in the Starbucks egg bites.

    Description

    These Cottage Cheese Egg Bites are easy to make with just a few simple ingredients. They resemble Starbucks egg bites and are made with eggs, cottage cheese, bacon, and chives. Great for meal prep, 14 grams of protein per serving and so good!


    Ingredients

    Scale
    • 8 large eggs
    • ¾ cup cottage cheese
    • ¼ teaspoon kosher salt
    • ¼ teaspoon ground black pepper
    • ⅓ cup cooked, chopped bacon
    • ⅓ cup shredded cheddar cheese
    • 2 tablespoons chopped fresh chives

    Instructions

    1. Preheat the oven to 350°F and spray a 12-cup silicone or metal muffin pan with cooking spray.
    2. Add the eggs, cottage cheese, salt, and pepper to a high-speed blender and blend on high until smooth and combined.
    3. Divide the egg mixture evenly between the muffin cups filling each one a little more than halfway full. Make sure not to overfill them. Top each egg bite with some bacon, cheddar cheese,  and chives.
    4. Bake the egg bites for 22-25 minutes until the eggs are set and the edges are golden. Remove and let cool.
    5. Carefully remove the egg bites from the pan and enjoy!

    Notes

    • I suggest using a silicone muffin pan for these egg bites since it is much easier to pop them out once they are done. 
    • Make sure not to overfill the muffin cups with the egg mixture. A little more then halfway is fine. You should have just enough to fill 12 muffin cups. 
    • Bake until the egg bites are set in the middle and golden around the edges. In my oven, they tool about 22 minutes at 350°F. 
    • Store leftovers in an airtight container in the fridge for up to 5 days. Reheat portions in the microwave for about 15-20 seconds until warmed through.
