Description
This viral ground beef sweet potato bowl with hot honey is the perfect balanced, high protein bowl that makes a satisfying dinner that takes under 30 minutes to make!
Ingredients

- 2 medium sweet potatoes – peeled and chopped into 1-inch pieces
- 1-2 tablespoons of olive oil or olive oil spray
- 1 teaspoon kosher salt
- 1/3 teaspoon ground black pepper
- 1 pound lean ground beef
- 2 teaspoons avocado oil
- 2 tablespoons taco seasoning
- 2 teaspoons tomato paste
- 1 medium ripe avocado- peeled and diced
- 2/3 cup cottage cheese
- drizzle of hot honey
Instructions
Cook the sweet potatoes
- Preheat the air fryer to 400°F.
- Toss the sweet potatoes in a bowl with olive oil, salt and pepper and any other seasoning you like.
- Transfer the seasoned sweet potato cubes to the air fryer in a single layer (a little overlapping is okay) and cook for 15-17 minutes, tossing them in the basket halfway through cooking.
Cook the ground beef
- Heat a skillet to medium heat on the stovetop, add the oil, then add the ground beef breaking it up in the pan.
- Add in the tomato paste and taco seasoning, add a sprinkle of salt if needed, and toss and cook until the meat is all browned and no longer pink. Set aside.
Assemble the bowls
- Divide the cooked ground beef and sweet potatoes between 2-3 bowls, top with some cottage cheese, diced avocado and hot honey.
- Serve and enjoy!
Notes
- Use good quality ingredients for the best flavor.
- Dice the sweet potato into even sized pieces for even cooking.
- Use olive oil spray to reduce the calories
- Season the meat well – I used tomato paste and taco seasoning
- Start with just a drizzle of hot honey – a little goes a long way
