Description

This viral ground beef sweet potato bowl with hot honey is the perfect balanced, high protein bowl that makes a satisfying dinner that takes under 30 minutes to make!


Ingredients

  • 2 medium sweet potatoes – peeled and chopped into 1-inch pieces
  • 1-2 tablespoons of olive oil or olive oil spray
  • 1 teaspoon kosher salt
  • 1/3 teaspoon ground black pepper
  • 1 pound lean ground beef
  • 2 teaspoons avocado oil
  • 2 tablespoons taco seasoning
  • 2 teaspoons tomato paste 
  • 1 medium ripe avocado- peeled and diced
  • 2/3 cup cottage cheese
  • drizzle of hot honey

Notes

  • Use good quality ingredients for the best flavor.
