Easy Viral Smashed Date S’mores (No Bake)

No bake smashed date s’mores are made with a smashed date layered with marshmallow fluff, graham crackers and melted chocolate. No campfire needed for these no bake smashed date treats everyone will love!

I have made these so many times already and my family keeps devouring them! Which I love because they are a low calorie, gluten free, low sugar treat!

Smashed date s’mores are easy to whip up by smashing dates then layering them with marshmallow fluff, graham crackers and melted dark chocolate, then chill and eat! That’s it! No campfires need.

As you know, I love a no bake dessert recipe and I love dates like these date snickers, date bark and these delicious date cookies. So, once I saw this new viral date s’mores recipe I had to try it!

I really never had “dates making a comeback” on my bingo card, but here we are and I’m definitely not mad about it. Known as nature’s candy, dates are the star of these irresistible date s’mores. They’re smashed into a soft, sticky, caramel-like base, then layered with fluffy marshmallow, crunchy graham crackers, and a decadent coating of melted chocolate.

Every bite has the perfect combination of soft and chewy dates, gooey marshmallow, crisp graham crackers, and rich chocolate. It’s everything you love about a classic s’more with a naturally sweet twist!

  • Quick and easy no bake treat – these date s’mores taste so decadent but they are very simple to make with just a few ingredients. 
  • Healthy dessert – traditional s’mores are not that healthy and can have a lot of calories. We used healthy dates, a healthier marshmallow fluff, sugar free chocolate chips and gluten free graham crackers to keep this healthy s’mores recipe under 100 calories. 
  • 5 simple ingredients you probably already have – I always have the ingredients for this dessert, which makes it even easier to whip up fast when that sweet craving hits. 
  • Store great – make a big batch and keep them on hand for a quick treat during the busy week.

Ingredients You’ll Need

Here are the simple ingredients you’ll need to make this amazing healthy s’mores recipe.

  • Medjool dates – I used Medjool dates but have also tried this recipe with Deglet dates that are smaller, lower in sugar and have less calories for a calorie-deficit friendly dessert that is still satisfying. 
  • Marshmallow fluff – I used a healthier marshmallow fluff – Toonie Moonies which you can buy at Whole Foods, Sprouts or on Amazon for the gooey marshmallow center. You can also use regular marshmallow fluff you can find at almost any grocery store. 
  • Graham crackers – I am gluten free right now so I used simple mills sweet thins but any graham crackers will work. 
  • Coconut oil – I used a little bit of coconut oil to melt with the chocolate to make it easier to spread over the dates. 
  • Chocolate chips – I love Lily’s brand chocolate chips but you can use any brand you like.

How to make this viral date s’mores recipe

Here is a summary of the steps for how to make this viral s’mores dates recipe with step-by-step photos.

Step 1: Slice each date lengthwise without cutting all the way through and remove the pit. Open the date and press it flat onto the parchment paper lined pan. If needed, place another piece of parchment on top and flatten it with the bottom of a glass or mason jar. Arrange the dates about 2 inches apart.

    Step 2: Spread about 1 tablespoon of marshmallow fluff over each date.

      Step 3: Press 1–2 sweet thins or pieces of graham cracker into the center of each one.

        Step 4: Spoon about 1 tablespoon of melted chocolate over each date, spreading it to cover the marshmallow and graham cracker layer. Sprinkle with crushed graham crackers, if desired. Chill: Freeze for 15–20 minutes, until the chocolate is set. Serve and enjoy!

          How To Store Date S’mores

          You can store these no-bake smashed date s’mores in an airtight container in the refrigerator for up to 5 days. You can also keep them in the freezer in a freezer safe container for up to one month. When ready to eat, just leave them on the counter for 10-15 minutes then enjoy!

          FAQ’s

          What are the best kind of dates to use in this recipe?

          I used pitted Medjool dates since they are plump and perfectly sweet. You could also try Deglet dates that are less sweet, smaller and have less calories if you need to keep this a lower calorie treat. Although these s’mores dates are about 100 calories each so they are a pretty low calorie anyways.

          Do I need to use marshmallow fluff?

          The marshmallow fluff in this recipe creates that nice gooey center we all love in a true s’mores but you can leave it out if you prefer to. 

          What are the best types of graham crackers to use?

          I used Simple Mills Sweet Thins to keep this recipe gluten free but you can use any type of graham crackers or even biscoff cookies.

          Ingredients

          • 12 Medjool dates
          • ½ cup marshmallow fluff 
          • 12–15 Simple Mills Sweet Thins or graham crackers
          • ½ cup dark chocolate chips
          • 1 teaspoon coconut oil 

          Instructions

          1. Prep the dates: Line a baking pan with parchment paper to prevent sticking since dates can become sticky. Slice each date lengthwise without cutting all the way through and remove the pit. Open the date and press it flat onto the parchment paper lined pan.           3. Melt the chocolate: Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth and melted, about 60–90 seconds.
          4. Top with chocolate: Spoon about 1 tablespoon of melted chocolate over each date, spreading it to cover the marshmallow and graham cracker layer. Sprinkle with crushed graham crackers, if desired.
          5. Chill: Freeze for 15–20 minutes, until the chocolate is set. Serve and enjoy!

          • You can use Medjool dates or Deglet dates in this recipe.
          • Any type of marshmallow fluff will work. I used Toonie Moonies brand.
