Using pumpkin in your fall baking is a healthier way to bake fall treats. The three ingredients in this pumpkin chocolate chip cookie recipe are pumpkin puree, spice cake mix, and dark chocolate chips. This makes this a budget-friendly dessert everyone will love!

Ingredients and Substitutions

Here is what you’ll need to make these simple pumpkin chocolate chip cookies.

  • Pumpkin puree – canned pumpkin puree, not pumpkin pie filling. Any pumpkin puree will work.
  • Spice cake mix – store-bought spice cake mix. Vanilla or chocolate cake mix will also work but will have a different taste.
  • Chocolate chips – I used Lily’s dark chocolate chips but any chocolate chips will work. You can even use white chocolate chips, salted caramel, or peanut butter chips.

  • Baking sheets + parchment paper
  • Mixing bowl
  • Measuring cups
  • Wooden spoon or rubber spatula
  • Cookie scoop

How to make 3 ingredient pumpkin cookies with chocolate chips

Here is a summary with step-by-step photos of how to make these super easy pumpkin cookies with just 3 ingredients in under 30 minutes!

Step 1 – add the pumpkin puree, the spice cake mix, and chocolate chips to a medium bowl

Step 2 – mix well to combine into a thick, wet batter.

Step 3 – Use a 1-tablespoon cookie scoop or two spoons to scoop the cookie dough onto the lined baking sheet, about 2 inches apart.

Step 4 – Bake the cookies at 350°F for 15-17 minutes then remove them from the oven, let them cool for 5 minutes, then transfer them to a cooling rack to continue cooling.

Expert tips for the best results

  • Use pumpkin puree and not pumpkin pie filling. I tested these pumpkin cookies with pumpkin pie filling and it was a total fail. 
  • Mix the batter well. Use a wooden spoon or stand mixer fitted with a paddle attachment to ensure the cookie batter is well mixed with all of the lumps smoothed out. 
  • Portion the cookies in small amounts – about 1 tablespoon each so they cook evenly. 
  • Don’t overcook – I made these cookies several times and found that 15-17 minutes was perfect in my oven. Since ovens vary, I recommend checking them at 14 minutes and continuing cooking as needed. 
  • Do not skip the cooling time. These 3 ingredient pumpkin cookies will set and firm up more as they cool, so you do not want to skip the cooling time.

Recipe Variations

  • Chocolate chips – mix up the chocolate chips and add in white chocolate chips, caramel, or peanut butter chips.
  • Nuts – fold in some pecans or walnuts to add more crunch and even more flavor to the cookies. 
  • Cake mix – spice cake mix works best in this recipe but vanilla cake mix or chocolate will also work!
  • Other mix-ins – we loved adding dried cranberries raisins or even chopped candy corn to these cookies. You can also swirl in some cream cheese for pumpkin cheesecake cookie vibes.

How to store 3 ingredient pumpkin cookies

These cookies should be stored in a non-airtight container layered in between parchment paper since they will get slightly sticky as you store them. Leftover cookies can be stored for up to 4 days on the counter or up to 7 days in the fridge. Note on freezing the cookies: I did try to freeze these pumpkin cookies and they just became crumbly and had less flavor, so I do not recommend freezing them. 

FAQs

Are these pumpkin cookies gluten-free?

This version of the recipe is not gluten-free but if you use gluten-free spice cake mix like this one, then they will be fully gluten-free!

Can you freeze 3 ingredient pumpkin cookies?

While you can freeze these cookies, I found that freezing them just made them dry, crumbly, and less flavorful.

Can I use other types of cake mix in this recipe?

Yes, vanilla cake mix and chocolate cake mix will also work but will have a slightly different flavor.

Description

These easy 3 ingredient pumpkin cookies make the best healthy fall treat! They have a wonderful bold pumpkin flavor and light and fluffy texture with pops of dark chocolate from the chocolate chips. Just 35 calories per cookie!


Ingredients

Scale
  • 1 (15.25 oz ) box of spice cake mix
  • 1 (15 oz) can of pumpkin puree – not pumpkin pie filling
  • ¾ cup of dark chocolate chips


Instructions

  1. Preheat the oven to 350°F and line 1 large or 2 medium baking sheet with parchment paper or a Silpat. 
  2. Combine the spice cake mix, pumpkin puree, and chocolate chips in a medium-sized mixing bowl until a thick, wet batter forms. Make sure to mix well to get all of the lumps smoothed out. 
  3. Use a small cookie scoop or spoon to scoop the cookie dough onto the lined baking sheet in about 1 tablespoon amounts, placing the cookies about 2 inches apart. Add more chocolate chips to the tops of the cookies for that bakery-style look. 
  4. Bake the pumpkin cookies in the middle rack of the preheated oven for 15-17 minutes until the edges are set and the middle is still slightly soft. 
  5. Once the cookies are done, remove them from the oven and let them cool for 5 minutes, then transfer the cookies to a cooling rack to continue cooling for another 10 minutes. 
  6. Serve and enjoy!

Notes

  • Pumpkin puree – it must be real pumpkin puree and not pumpkin pie filling. 
  • Cake mix – you can use vanilla cake mix or even chocolate cake mix in place of the spice cake mix. 
  • Use a cookie scoop to evenly scoop the dough so the cookies all cook evenly. 
  • Do not skip the cooling time since the pumpkin cookies will continue to set and cook as they cool. 
  • Store leftovers in a non-airtight container, layered in between parchment paper on the counter for up to 4 days and in the fridge for up to 7 days.
