I pretty much love all things pumpkin as you know from my array of pumpkin recipes like these pumpkin protein muffins, pumpkin spice latte, pumpkin donut holes and more! So it was time for these pumpkin pie overnight oats and let me tell you they did not disappoint. 

I am obsessed with peanut butter banana overnight oats but this is my new favorite for fall!

This pumpkin pie overnight oats recipe is thick, creamy and packed with cozy fall flavors! Made with pumpkin puree, rolled oats, milk, vanilla protein powder, chia seeds, pumpkin spice and a touch of maple syrup, they take just 5 minutes to prep and taste just like pumpkin pie.

Each serving packs about 20 grams of protein, making these pumpkin overnight oats a satisfying, make-ahead breakfast. Top them with vanilla Greek yogurt, chopped pecans and a drizzle of maple syrup for the ultimate healthy fall breakfast!

Ingredients and Substitutions

You only need a few simple ingredients to make these amazing pumpkin spice overnight oats. They are truly the best breakfast for fall and are loaded with pumpkin flavor. Here is what you’ll need:

  • Rolled oats – this is the base of the recipe, I used Bob’s Red Mill Rolled Oats. You can use gluten free as well. 
  • Protein powder – I added protein powder to give this overnight oats recipe a nice boost of protein. I love vanilla protein powder for the flavor but you could also use chocolate or pumpkin flavored if you prefer. 
  • Pumpkin puree – canned pumpkin puree gives this recipe that wonderful pumpkin flavor. 
  • Milk – the milk is mixed with the other ingredients to allow the oats to soak up all of the amazing flavors and become nice and soft. I used unsweetened soy milk but any milk will work. 
  • Chia seeds – I love adding chia seeds for more volume, creaminess and fiber in this recipe. Feel free to leave them out if you don’t like chia seeds.
  • Maple syrup – a little bit of maple syrup gives this recipe a nice natural hint of sweetness. You could also use agave or honey.
  • Pumpkin pie spice – for that warm pumpkin fall taste we all love!
  • Salt – just a pinch to round out all of the flavors.

Will steel cut oats work?

Rolled oats work better for overnight oats because they soften and absorb liquid without becoming too mushy, creating that thick, creamy texture you want. Steel cut oats will work but will become mushier.

How To Make Pumpkin Pie Overnight Oats

Here is a summary with step by step instructions for how to make this amazing overnights oats recipe with pumpkin.

  1. Add all ingredients to a mixing bowl. Add the oats, milk, protein powder, pumpkin, chia seeds, maple syrup, pumpkin pie spice, salt to a medium bowl. 

    2. Mix well to fully combine everything.

      3. Divide the oats mixture between two jars.

        4. Cover and refrigerate for 5-6 hours or overnight.

          How to store pumpkin overnight oats

          Overnight oats are best stored in a covered container in the refrigerator for up to 4 days. You will likely need to give them a good stir when ready to eat to remix all the flavors together then top and enjoy!

          Do you add raw oats or do they need to be cooked first? 

          This pumpkin overnight oats recipe is a no cook recipe so the oats are added raw and do not need to be cooked in advance, which is great!

          Are overnight oats eaten cold or warm?

          I love my overnight oats cold, right from the fridge but my husband prefers them warmed up. Either way they are delicious!

          Description

          These pumpkin pie overnight oats are perfectly thick and creamy and make the ultimate healthy fall breakfast! Made with oats, pumpkin, protein powder, chia seeds and a hint of maple syrup, you can whip them up in 5 minutes and enjoy them all week long!


          Ingredients

          Scale
          • 1 cup rolled oats
          • 1 cup milk
          • 1 scoop vanilla protein powder – see recipe notes
          • ⅓ cup canned pumpkin puree – not pumpkin pie filling
          • 1 tablespoon chia seeds
          • 1 tablespoon maple syrup 
          • ½ teaspoon pumpkin pie spice
          • Pinch of salt

          Instructions

          1. Add all of the ingredients (oats, milk, protein powder, pumpkin, chia seeds, maple syrup, pumpkin pie spice, salt) to a medium size mixing bowl. 
          2. Whisk well to fully combine everything. 
          3. Evenly divide the overnight oats mixture between two jars fitted with a lid and refrigerate for 5-6 hours or overnight. 
          4. When ready to enjoy, remove the pumpkin overnight oats from the fridge, top with your favorite toppings like Greek yogurt, chopped nuts and maple syrup and enjoy! Note: overnight oats can be eaten cold or warmed in the microwave in a microwave-safe dish. 

          Notes

          • Rolled oats work best in this recipe and I do not recommend using steel cut oats. Gluten free rolled oats also work great!
          • Make sure to use real canned pumpkin and not pumpkin pie filling. 
          • The oats are added to the mixture raw and do not need to be cooked first. 
          • If you are not using vanilla or pumpkin flavored protein powder then I recommend adding ½ teaspoon vanilla extract to the mixture. 
          • Store overnight oats in the fridge, covered for up to 4 days.
