This blueberry bagels recipe only requires 3 ingredients. Here is what you’ll need to make them:

- Greek yogurt – plain Greek yogurt like the FAGE brand. I like to use nonfat but any fat % will work, just make sure it is plain, Greek yogurt and not flavored.
- Self-rising flour – I like to use self rising flour since it reduces the number of ingredients but you could also use a homemade version by combining 1 cup all purpose flour with 1.5 teaspoons baking powder. If you are using gluten free measure for measure flour then add 1 tablespoon baking powder to ensure the bagels rise properly.
- Frozen wild blueberries – now this is important – small, wild frozen blueberries are key because they are easier to mix into the dough and will not make it too wet. They get plump and juicy as the bagels cook and are just the best addition to this homemade bagel recipe.
- Egg – I like to use an egg-wash (1 large egg mixed with a splash of water) on my bagels so they get nice and golden as they cook. This step is optional but recommended. You can also use olive oil cooking spray or melted butter if you need to keep this recipe egg-free. It mimics the blanching step when making traditional homemade bagels.

- Mix the flour and yogurt into a chunky bagel dough then fold in the blueberries. I like to use a fork to do this at first.

- Use the proper measuring cups (I used metal ones) to measure the flour and yogurt. When you measure the flour use the spoon and level method and don’t scoop the flour with your measuring cup.
- If the bagel dough seems sticky then add a bit more flour until it is easier to work with. Flour on your hands makes it easier as well.

To make these air fryer bagels in the oven, place them onto a lined baking sheet once you have formed them. Then bake them on the top rack of the oven at 350 degrees F for 20-22 minutes. Remove and let cool.
Storing and reheating
- How to store: Wrap the bagels tightly in plastic wrap and store them in the refrigerator for up to 3 days. When ready to enjoy, reheat in the air fryer or slice and toast in the toaster.
- How to Freeze: Allow the bagels to cool completely, then wrap each one tightly in plastic wrap. Place the wrapped bagels in a freezer-safe zip-top bag and freeze for up to 30 days. To enjoy, thaw overnight in the refrigerator or remove one directly from the freezer, unwrap it, wrap it in a clean paper towel, microwave for about 20 seconds to defrost, then slice and toast. So good!

Ingredients
- 1 cup plain Greek yogurt
- 1 cup self-rising flour
- ½ cup frozen wild blueberries
- Egg – optional for egg wash
For gluten free blueberry bagels
- 1 cup plain Greek yogurt
- 1 cup gluten free measure for measure flour
- 1 tablespoon baking powder
- ½ cup frozen wild blueberries
Instructions
- Preheat the air fryer to 350°F.
- Add the Greek yogurt and flour to a medium size mixing bowl and mix well to combine into a chunky bagel dough. Then fold in the blueberries. I like to use a fork to do this.
- Turn the blueberry bagel dough onto a well floured surface and use your hands to knead it for 1-2 minutes until smooth and no longer sticky. If the dough is too sticky to knead than add a little bit more flour.
- Press the dough into a disc shape and divide it into 4 equal sections. Roll each section of dough into a 6 inch log then connect the ends and press them together to form the bagels.
- Crack the egg into a small bowl and whisk it with a splash of water or milk. Brush some egg wash over the top and sides of each bagel.
- Place the bagels into the air fryer basket making sure they are not touching. I used an air fryer liner but you can also just spray the basket with non-aerosol cooking spray to prevent sticking.
- Cook the bagels at 350°F until golden and cooked through about 18-20 minutes.
- Once the bagels are done, remove them from the air fryer and allow them to cool for 5-10 minutes before you slice and serve them.
Notes
- Use Plain Greek yogurt and not regular yogurt or this recipe will not work.
- If the dough looks sticky then add 1-2 teaspoons or flour to the bagel dough.
- You can use an air fryer liner for easier clean up if you like.
- Do not skip the cooling time since the bagels will continue to cook as they cool.
