Description
This quick and easy strawberry kale salad is made with fresh, hearty kale, crunchy pecans, sliced red onion, goat cheese, and the most amazing strawberry vinaigrette. It makes a wonderful salad you can prep in advance and enjoy for lunch or dinner any day of the week!
Ingredients

- 1 bunch of fresh kale chopped – about 6 cups
- 1 cup sliced fresh strawberries
- 1/2 cup sliced red onion
- 1/3 cup chopped pecans
- 1/4 cup crumbled goat cheese
- Strawberry vinaigrette dressing
Instructions
- Mix up the strawberry vinaigrette. You can do this in advance and store it in the refrigerator for up to 2 days or use store-bought.
- Add the chopped kale, sliced strawberries, sliced red onion, goat cheese, and pecans to a large bowl.
- Pour a good amount (about 1/4 cup) of the dressing over the salad and toss.

Notes
- Kale – you can use curly kale or dinosaur kale in this recipe. To make it even faster to make, prepare and store your kale in advance!
- Strawberries – fresh strawberries are a MUST in this recipe. Frozen strawberries will just make the salad mushy.
- Storing – the best way to store this salad is to store everything separately, then assemble, dress and toss it when you are ready to serve it.
