Description

This quick and easy strawberry kale salad is made with fresh, hearty kale, crunchy pecans, sliced red onion, goat cheese, and the most amazing strawberry vinaigrette. It makes a wonderful salad you can prep in advance and enjoy for lunch or dinner any day of the week!


Ingredients

Scale
  • 1 bunch of fresh kale chopped – about 6 cups
  • 1 cup sliced fresh strawberries
  • 1/2 cup sliced red onion
  • 1/3 cup chopped pecans
  • 1/4 cup crumbled goat cheese
  • Strawberry vinaigrette dressing

Instructions

  1. Mix up the strawberry vinaigrette. You can do this in advance and store it in the refrigerator for up to 2 days or use store-bought. 
  2. Add the chopped kale, sliced strawberries, sliced red onion, goat cheese, and pecans to a large bowl. 
  3. Pour a good amount (about 1/4 cup) of the dressing over the salad and toss. 
  4. Serve and enjoy. See the notes section for make-ahead and storage suggestions. 

Notes

  • Kale – you can use curly kale or dinosaur kale in this recipe. To make it even faster to make, prepare and store your kale in advance!
  • Strawberries – fresh strawberries are a MUST in this recipe. Frozen strawberries will just make the salad mushy. 
  • Storing – the best way to store this salad is to store everything separately, then assemble, dress and toss it when you are ready to serve it.
