Easy One Pot Low Carb Turkey Chili

Description

This super simple Low Carb Turkey Chili is loaded with vibrant flavors but is lower in carbs than traditional chili. It comes together all simmered in one pot and is made with lean ground turkey, chili spices, tomatoes and veggies. A perfect healthy dinner the whole family will love!


Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 1 pound ground turkey – I used 93/7
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves of garlic – peeled and minced
  • 2 tablespoons tomato paste
  • 1 orange or red bell pepper – diced seeds removed
  • 1 green bell pepper – diced seeds removed
  • 1 small onion – peeled and diced
  • 1 (15 ounce) can fire roasted diced tomatoes
  • 1 (15 ounce) can crushed tomatoes 

Instructions

  1. Heat a large pot or dutch oven to medium heat, add the oil and the turkey. Break the turkey up and cook it until it is no longer pink. Mix up the spices and add them in to season the turkey. Toss and cook the meat for 1-2 minutes then stir in the garlic and tomato paste.
  2. Add in the peppers and onions and stir that all together and let it cook for a few minutes. Then pour in the crushed and diced tomatoes. Stir everything together.
  3. Bring that all to a boil then cover and simmer on low heat for 15-20 minutes.
  4. Serve hot with your favorite chili toppings.

Notes

  • You can use any type of ground meat like ground turkey, ground chicken, ground beef or even meatless crumbles.
  • Feel free to add in more veggies like corn, broccoli or sweet potatoes.
  • Make sure to cover the pot while the chili simmers so it locks in all the flavors.
  • The spice blend adds the perfect chili flavor to this recipe but if you prefer another combination of spices then feel free to switch it up.
