Kid-Friendly Avocado Toast

Description

Kid-friendly Avocado Toast that is a super easy breakfast or snack to get them to eat their veggies and avocado! Fun shaped sprouted grain toast, covered with creamy avocado and fun toppings!!!!  Vegan, easily gluten-free and a super simple, healthy breakfast everyone will love!


Ingredients

Scale
  • 6 slices of whole-grain bread (like Ezekiel bread)
  • 1 ripe avocado (peeled and sliced with seed removed)
  • 1 tablespoon fresh-squeezed lime juice (for garnish (optional))
  • salt and pepper
  • 1/2 teaspoon garlic powder (optional)

For the toppings

  • 1/4 cup diced cucumber
  • 1/4 cup diced red bell pepper
  • 1/8 cup diced red onion
  • 1/8 cup chopped chives
  • 1/8 cup crumbled feta cheese
  • 1/8 cup pomegranate seeds
  • 2 tablespoons everything bagel seasoning

Instructions

  1. Use cookie cutters to cut the bread into desired shapes. To cut the shapes out: Place the cookie cutter into the center of the bread and press hard while jiggling the cookie cutter. Pull the edges of the bread away and place the shaped piece of bread onto a baking sheet lined with parchment paper or sprayed with cooking spray. TIP: Place the leftover bread pieces into a freezer-friendly zip lock bag and freeze to have on hand to make croutons or breadcrumbs.
  2. Once you have cut out all of your shapes, toast in a 425 degree F oven for 3-5 minutes until golden brown.
  3. Place the avocado into a small mixing bowl, sprinkle in the lime juice, salt, and pepper, and use a fork or potato masher to mash it up.
  4. Spread each piece of toast with some of the mashed avocado and top with desired toppings.

Notes

  1. Mix up the toppings – use any toppings you and your kids like such as sliced strawberries, peaches, sliced cherry tomatoes, hemp seeds, or herbs like basil or cilantro.
  2. Add some protein – add a fried egg or these roasted crispy chickpeas
  3. Use roasted sweet potato in place of the bread – Just slice the sweet potato into round shapes, brush with olive oil, sprinkle with salt and pepper, and bake for 15-17 minutes at 425 degrees F. So delicious!
  4. If you have left-over mashed avocado, make sure you sprinkle it with lime juice, salt, and pepper. Then place it into an airtight container, place some plastic wrap over the top to cover the avocado, place the lid on, and store it in the fridge for up to 2 days.  
  5. How to store avocados. There are a few ways you can store avocados – Unripe avocados should be stored on the counter until they are beginning to ripen (i.e get softer). Ripe Avocados should be stored in the refrigerator to slow down their ripening and last longer.
  6. Storing avocados after you slice them open. First, if you know you are only going to use half of an avocado, then you want to save the half that has the seed in it since it will last longer. Then wrap it up tightly with plastic wrap so there are no air pockets. Store it in the fridge cut-side down so no air or light can get to it(air and light are what turn it brown). It should last a few days and stay nice and green. You can also brush it with a little lime or lemon juice then wrap it up tightly with plastic wrap. Trus me! I do this all the time and am amazed every time when it is still bright green and beautiful after a few days.
