Roasted Boneless Turkey Breast

Description

This oven-roasted boneless turkey breast is seasoned and slowly roasted until wonderfully juicy and tender. It comes out perfectly cooked every time with golden crispy skin and flavorful meat. It is a great option for the holidays or a weekend dinner everyone will love!


Ingredients

  • Boneless turkey breast – 1 large or 2 small (about 5lbs)
  • 34  tablespons extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 23 lemons sliced into 1/4-inch slices

Instructions

  1. Arrange a rack in the middle part of the oven and preheat the oven to 350°F.  Line a baking sheet with parchment paper or foil and set it aside. 
  2. Combine the oil and seasoning in a small bowl and mix well. 
  3. Pat the turkey breast dry using clean paper towels, then brush it all over with the oil seasoning and season the turkey under the skin. 
  4. Arrange the lemon slices on the lined baking sheet and place the seasoned turkey breast(s) on top of the lemon slices. 
  5. Place the turkey into the preheated oven on the middle rack and roast it for 60-90 minutes, until the internal temperature reaches 160°F. For extra crispy skin, increase the oven temperature to 375°F for the last 10 minutes of cooking time. 
  6. Once the turkey is done, remove it from the oven and let it rest for at least 20 minutes before you slice and serve it. 

Notes

  • Select a good quality boneless turkey breast with the skin intact for the best results. You can use one large turkey breast or 2 smaller ones like I did. Note, that smaller turkey breasts will not take as long to cook. See the cooking times chart in the post. 
  • Do not overcook the turkey breast. I recommend checking the turkey for around 45-60 minutes and continuing to cook from there as needed. 
  • Let the turkey rest for at least 20 minutes after cooking, before you cut it. 
  • Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave or at 325°F in the oven until warmed through.
