Description
This Copycat Chick-fil-A Kale Crunch Salad recipe is a homemade version that you are going to love! It comes together in 10 minutes and is loaded with crunchy, tangy flavors that will leave you wanting more!
Ingredients
Scale
- 6–8 cups of shredded or thinly sliced kale
- 2 teaspoons olive oil or lemon juice
- Pinch of salt and pepper
- 4 cups shredded or thinly sliced cabbage
- 1 medium granny smith apple – thinly sliced
- 1/3 cup slivered almonds
- 1/3 cup dried cranberries
- Dijon vinaigrette dressing
Instructions
- Add the kale to a large salad bowl, drizzle it with a little olive oil or lemon juice and a pinch of salt and pepper. Use your hands or salad tongs to lightly massage the kale in the bowl for 1-2 minutes. Let the kale rest in the bowl for 2-3 minutes before adding the rest of the ingredients.
- Add the cabbage, apple, almonds, and cranberries to the bowl with the kale.
- Mix up the dressing and pour it over the salad ( I started with 1/3 cup then added more as needed). Toss everything together, serve and enjoy!
Notes
- Fresh kale is best but you can buy pre-shredded, pre-washed kale as a shortcut from the store.
- Any apples would be great in this salad. I chose Granny Smith for added color and tart flavors.
- To make this salad ahead of time, combine all of the ingredients in a large bowl, mix up the dressing but store the salad and dressing separately. Then dress, toss and serve when ready.
- Store leftovers in an airtight container in the refrigerator for up to 4 days. When ready to enjoy, give it a nice toss to redistribute the dressing.
