Description

This sheet pan gnocchi and sausage is an easy weeknight dinner you can make with minimal cleanup that is packed with protein and veggies. It has golden plump gnocchi, caramelized veggies and flavorful chicken sausage made all on one pan in 30 minutes!

Ingredients

Scale
  • 1 (16oz) package shelf stable potato gnocchi
  • 16oz pre-cooked chicken sausage
  • 1 head of broccoli – chopped into florets
  • 1 red bell pepper – chopped into 1-inch pieces
  • 1 orange bell pepper – chopped into 1-inch pieces
  • 1 medium purple onion – chopped into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper – to taste
  • Parmesan cheese – optional for topping

Instructions

  1. Preheat the oven to 425°F and spray or line a large baking sheet.
  2. Add all of the ingredients (gnocchi, sausage, veggies and seasoning) to a large mixing bowl.
  3. Drizzle everything with olive oil and seasoning and toss to coat well.
  4. Spread the gnocchi, veggies and sausage mixture onto the prepared sheet pan in an even layer, some overlapping is okay.
  5. Cook at 425 degrees F for 20-25 minutes, tossing everything in the pan halfway through cooking.
  6. Remove, divide into bowls, top with grated parmesan cheese and enjoy!

Notes

Use shelf stable gnocchi and not frozen gnocchi for the best results.

Chop the veggies into one inch pieces so everything cooks at the same time.

Use precooked sausage like chicken or turkey sausage.

Toss everything in the pan halfway through cooking so it all gets nice and golden.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat leftovers in the oven or on the stovetop in a pan until fully heated through.
