Healthy Avocado Brownies

Description

Healthy Avocado Brownies that are so incredibly fudgy, and decadent. Loaded with fiber and they are simple and easy to make! Gluten-free and dairy-free! This will surely become your new favorite brownie recipe!


Ingredients

  • 1 (15 oz) can black beans – drained and rinsed
  • 1/2 ripe medium-sized avocado – about 1/3 cup mashed
  • 3 large eggs
  • 1/4 cup coconut oil -melted
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut sugar
  • 1/4 cup + 1 tbsp dark brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup chocolate chips – plus about 1/4 cup more for topping

Instructions

  1. Preheat the oven to 350 degrees F, and line an 8×8 baking pan with parchment paper then spray it lightly with cooking spray to prevent sticking. 
  2. Add the black beans to the bowl of a food processor and pulse until creamy. Add 1 teaspoon of water to help puree the beans, if needed. 
  3. Mash up the avocado a little, then add it to the food processor with the black beans. Add in the eggs, melted coconut oil, and vanilla, and pulse until fully combined.
  4. Add in the sugars, cocoa powder, baking powder, and salt and pulse to combine into a smooth brownie batter. Fold in 2/3 cup of the chocolate chips, and pour the batter into the baking dish. Sprinkle the rest of the chocolate chips on top. 
  5. Bake in the middle rack of the oven for 40-45 minutes, until a toothpick inserted in the middle, comes out with slightly wet crumbs on it. 
  6. Remove, and let cool for at least 30 minutes before slicing and serving. 

Notes

  • Use a nice ripe avocado.
  • Rinse the black beans really well.
  • To store these brownies for a few days – Place them in an airtight container, layered with parchment paper and store them in a cool dry place for up to 3 days!
  • To freeze these brownies – After they have cooled completely, wrap each brownie in plastic wrap, then parchment paper, and store them in a freezer-friendly container in your freezer for up to 2 months.
  • To defrost, leave them in the fridge overnight or on the counter for about 20 minutes.
