Easy Ranch Roasted Carrots

Description

These easy ranch-roasted carrots are loaded with flavor and only require 3 simple ingredients. They cook in about 25 minutes and make the best healthy side dish that kids and adults will love!


Ingredients

  • 1.5 lbs whole carrots, peeled and sliced into 1/4-1/2 inch thick slices
  • 2 tablespoons olive oil or avocado oil
  • 3-4 tablespoons store-bought ranch seasoning


Instructions

  1. Preheat the oven to 425° F and spray a baking sheet with cooking spray or line it with parchment paper.
  2. Place the sliced carrots into a mixing bowl and drizzle them with the 2 tablespoons of olive oil and lightly toss to coat all of the carrots in the oil.
  3. Sprinkle 3 tablespoons of the ranch seasoning onto the carrots and toss to coat.
  4. Lay the seasoned carrots in a single layer on the baking sheet. You may need to do this in batches or use more than one baking sheet if they do not all fit on one.
  5. Bake at 25 minutes until the carrots are starting to turn golden brown with slightly crispy edges.
  6. Remove the carrots from the oven and sprinkle on the remaining 1 tablespoon of ranch seasoning and a pinch of black pepper. Toss lightly.
  7. Serve warm and enjoy!

Notes

  1. If you feel ambitious and would like to make your own ranch seasoning mix, here is a great recipe!
  2. You can use sliced whole carrots or baby carrots in this recipe.
  3. Slice the carrots into 1/4-1/2 inch thick slices to ensure the edges get nice and crispy and the carrots become perfectly tender when roasted.
  4. If you want the carrots to have crispier edges, then turn the oven temperature up to 425 degrees F for the last few minutes of cooking time.
  5. These carrots store great in an airtight container in the fridge for up to 4 days. Reheat in the microwave or in the oven on a sheet pan until heated through.
