Easy Deviled Eggs With Relish

Description

These deviled eggs with relish make a delicious appetizer everyone will go crazy for!  The filling is made with bright yellow cooked egg yolks, mayo, mustard, and pickled relish for a tasty twist on classic deviled eggs. 


Ingredients

  • 6 large eggs
  • 1/4 cup mayo
  • 1 tablespoon pickled relish
  • 1 teaspoon Dijon mustard
  • Salt and pepper – to taste

Instructions

  1. Hard boil the eggs – you can do this in the Instant Pot, air fryer, or on the stovetop. The Instant Pot is the best method. Just pour 1 cup of water into the Instant pot, place the metal trivet it came with in the bottom, and place the uncooked eggs on top of the trivet in an even layer. Secure the lid and cook the eggs in manual mode for 5 minutes, let the pressure naturally release for 5 minutes, remove the eggs, and place them into an ice bath for 5 minutes. 
  2. Peel and slice the eggs – peel each egg by lightly tapping it on a hard surface, then the peel should slide right off. Roll the eggs in a bowl or dish of shallow water to make them easier to peel. Then use a clean knife to slice each egg in half, lengthwise. Use a small spoon to remove the cooked egg yolks and place them into a medium bowl. Place the cleaned-out, intact egg whites onto a platter. 
  3. Mix up the filling – use a fork or potato masher to mash up the egg yolks then combine them with the rest of the ingredients (mayo, mustard, relish, salt, and pepper).  The filling should be creamy and chunky. Blend the filling in the food processor if you prefer it to be smoother. 
  4. Fill and serve the deviled eggs – use a dessert spoon or baby spoon to fill each egg with the filling. Make sure not to overfill them. Once all of the eggs are filled, serve and enjoy! Note: for fancier deviled eggs, add the filling to a small ziplock bag, snip off the tip of the bag, and pipe the filling into each egg. 

Notes

  • Use large or extra large eggs so you have a good amount of filling and area to fill the eggs. 
  • Cook the eggs 1-2 days in advance and store them in an airtight container in the refrigerator. 
  • Let the hard-boiled eggs cool beforehand since they will be easier to work with. 
  • Store assembled deviled eggs with relish in an airtight container in the refrigerator and eat within 3 days.
