Homemade Chicken Apple Sausage Patties

Description

These easy homemade Chicken Apple Sausage Patties are quick to make and great for breakfast, lunch, or dinner. They are made with ground chicken, apple, onion, olive oil, and rosemary. Gluten-free, dairy-free, paleo, and Whole30 and perfect for meal prep!


Ingredients

  • 1 pound ground chicken – like 93/7
  • 1 medium apple – diced (about 1 cup)
  • 1/4 cup diced red onion
  • 1 tablespoon chopped fresh rosemary
  • 23 tablespoons olive oil – divided
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 12 tablespoons cold water – optional

Instructions

  1. Add all of the ingredients, ground chicken, apple, onion, rosemary, 1 tablespoon olive oil, salt, and pepper to a large mixing bowl. 
  2. Mix well to combine all of the ingredients. Add some cold water and mix again if the mixture looks dry, making sure not to overmix. 
  3. Form the mixture into 10-12 even size round patties, about 2 ounces each, and place them onto a lined pan or plate. 
  4. Heat a cast iron pan or heavy pan to medium-high heat, add 1 tablespoon olive oil to the pan. Once the pan is hot, add a few of the sausage patties in a single layer and make sure they are not touching. You may need to cook them in 2 batches. Cook for 4-5 minutes, flip, and cook for 2-3 more minutes. Add more olive oil to the pan if they are sticking. 
  5. Once the sausages are done cooking, remove them from the pan and place them onto a paper towel-lined plate to cool for a few minutes. 
  6. Serve and enjoy!

Notes

  • Use good quality ground chicken or make your own by pulsing raw chicken breast or chicken thighs in the food processor
  • Form the patties into even sizes, so they cook at the same time. 
  • Store any leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave or in a pan on the stovetop until warmed through.
