Description

This incredible Viral Cucumber Pepper Salad is the ultimate summer side dish! It is refreshing, sweet, and spicy and can be made in under 10 minutes with a few simple ingredients. Great for meal prep too!


Ingredients

  • 45 Persian cucumbers – cut into rounds
  • 78 mini sweet bell peppers – sliced into rings
  • 2 large carrots – cut/peeled into ribbons or cut into small pieces
  • 1 medium shallot – thinly sliced
  • 1/4 cup Asian miso ginger dressing – any brand
  • 1 tablespoon chili crunch oil
  • 1 tablespoon of everything bagel seasoning

Instructions

  1. Add all of the chopped veggies to a large bowl.
  2. Pour the dressing over the salad and toss to coat.
  3. Add the chili oil and bagel seasoning and toss everything together.
  4. Top with more bagel seasoning, if desired, and serve right away or chill for 1 hour, toss again, then serve.

 

Notes

  • Dressing: use any Asian dressing you like. Braggs is a good brand. 
  • Veggies: Persian or English cucumbers work best in this recipe but any cucumbers will work. Mini sweet bell peppers are best but regular bell peppers can also be used. 
  • Chili oil: start by adding a small amount, like a teaspoon at a time until you reach your desired level of spiciness. 
  • Storage: leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
