Description
This incredible Viral Cucumber Pepper Salad is the ultimate summer side dish! It is refreshing, sweet, and spicy and can be made in under 10 minutes with a few simple ingredients. Great for meal prep too!

- 4–5 Persian cucumbers – cut into rounds
- 7–8 mini sweet bell peppers – sliced into rings
- 2 large carrots – cut/peeled into ribbons or cut into small pieces
- 1 medium shallot – thinly sliced
- 1/4 cup Asian miso ginger dressing – any brand
- 1 tablespoon chili crunch oil
- 1 tablespoon of everything bagel seasoning
Instructions
- Add all of the chopped veggies to a large bowl.
- Pour the dressing over the salad and toss to coat.
- Add the chili oil and bagel seasoning and toss everything together.
- Top with more bagel seasoning, if desired, and serve right away or chill for 1 hour, toss again, then serve.
Notes
- Dressing: use any Asian dressing you like. Braggs is a good brand.
- Veggies: Persian or English cucumbers work best in this recipe but any cucumbers will work. Mini sweet bell peppers are best but regular bell peppers can also be used.
- Chili oil: start by adding a small amount, like a teaspoon at a time until you reach your desired level of spiciness.
- Storage: leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
