BBQ Chicken Salad – With Creamy BBQ Dressing

Description

A quick and easy BBQ Chicken Salad that is loaded with fresh veggies like cherry tomatoes, lettuce, onion, avocado, and scallions topped with an incredible creamy BBQ dressing! A great salad for entertaining a crowd or for feeding a family!


Ingredients

For The BBQ Chicken Salad 

  • 1.5 cups chopped or shredded cooked chicken 
  • 1/4 cup BBQ sauce plus more for the dressing
  • 68 cups of sliced fresh romaine lettuce 
  • 1 cup cooked black beans – I used store-bought canned black beans that I drained and rinsed
  • 1 cup canned, cooked corn
  • 1 cup sliced cherry tomatoes 
  • 1 ripe avocado, peeled, seed removed and diced
  • 1/2 cup diced red onion
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cashews

For the Creamy BBQ Dressing

  • 1/4 cup mayo
  • 1/4 cup bbq sauce – I used Kevin’s Paleo BBQ Sauce
  • 1 teaspoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Add the cooked chicken to a bowl and pour the BBQ sauce over it and toss to coat the chicken. 
  2. Arrange the sliced lettuce on the bottom of a large bowl and then add the rest of the salad ingredients on top along with the BBQ chicken. 
  3. Mix up the dressing by combining all of the dressing ingredients in a bowl and mixing until creamy. 
  4. Pour the dressing over the salad and lightly toss. 
  5. Serve cold and enjoy!

Notes

  • Veggies – cut the lettuce into ribbons by rolling it up in a bunch and running a knife through it. Cut the veggies in smaller sizes so it makes it easier to toss and eat this salad. 
  • Chicken – I used cooked chicken breast but you could also use cooked chicken thighs or shredded rotisserie chicken in this recipe and make it in advance. 
  • Dressing – you can make the dressing a few days in advance and store it in an airtight container in the refrigerator for up to 2 days. Just give it a good stir and maybe add a squeeze of lime juice to freshen it up when you are ready to use it. 
  • Storage – I recommend storing this bbq chicken salad undressed by storing all of the ingredients in airtight containers in the refrigerator. Store the dressing separately as well then dress and toss when you are ready to enjoy it!
