Description

This air fryer sausage and potatoes is easy to whip up with a few simple ingredients like baby potatoes and chicken sausage. It is perfectly seasoned and cooked quickly in the air fryer until golden and flavorful. Great, family friendly meal for busy weeknights.

Ingredients

Scale
  • 1 pound baby potatoes halved
  • 1 large green or red bell pepper – cut into 1-inch pieces
  • 1 medium yellow onion – peeled and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 (12oz) package precooked chicken sausage or pork sausage – sliced into 1/2-1-inch rounds

Instructions

  1. Preheat the air fryer to 400°F – if your air fryer has a preheat function
  2. Add the chopped potatoes, bell peppers, and onion to a medium bowl, drizzle with olive oil and add in the seasoning (Italian seasoning, garlic powder, salt and pepper), toss to coat everything in the oil and seasoning.
  3. Add the potatoes and veggies to the air fryer in a single layer (if some are overlapping that is okay), shake the basket, then close and cook for 12-15 minutes shaking everything in the air fryer basket halfway through cooking – if using a tray air fryer then rotate the tray halfway through cooking for even browning.
  4. Then add the cut sausage, toss everything in the air fryer basket and cook for 5-7 more minutes, until the internal temperature of the sausage reaches 165°F, when checked using a meat thermometer.
  5. Serve and enjoy!

Notes

  • Cut the potatoes, sausage and peppers and onion into 1-1.5 inch pieces so everything cooks evenly in the air fryer.
  • You can use any type of potatoes like baby potatoes, Yukon gold, russets, sweet potatoes or even purple potatoes. Just make sure to cut them into 1-1.5 inch pieces.
  • Any type of precooked sausage will work, I used smoked chicken sausage. Kielbasa also works great in this recipe.
  • Shake the basket halfway through cooking to ensure even browning.
  • Store leftover sausage and potatoes in an airtight container in the refrigerator for up to 4 days. Reheat portions in the air fryer at 350°F util fully heated through.
