Description
These crispy air fryer fingerling potatoes are the best easy way to get perfectly golden, fluffy potatoes in half the time it takes in the oven! They make a quick side dish that goes with so many other things!

- 1 pound of fingerling potatoes – sliced in half lengthwise
- 1–2 tablespoons extra virgin olive oil or avocado oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Fresh chopped parsley – optional for serving
Instructions
- Preheat the air fryer to 400°F.
- Add the sliced fingerling potatoes to a medium size mixing bowl. Drizzle them with the oil and sprinkle them with the seasoning. Then toss to coat all the potatoes very well in the oil and seasoning.
- Spray the air fryer basket with cooking spray (non-aerosol), and place the seasoned potatoes into the air fryer basket. Cook for 15-17 minutes, shaking the potatoes in the basket halfway through the cooking time to get them all nice and golden and crisp.
- Serve topped with fresh chopped parsley and enjoy!
Notes
- Any type of fingerling potatoes will work in this recipe. I used multi-colored fingerling potatoes that you can find at most grocery stores.
- Mix up the seasoning to customize this recipe – see variations in the post
- Don’t skip the oil and seasoning – the oil allows the seasoning to stick to the potatoes and gets them golden and crispy. The seasoning brings out the flavor of the potatoes and makes them so tasty.
- Store leftovers in an airtight container in the refrigerator for 4 days.
- Reheat in the air fryer at 350°F for 4-6 minutes or in the microwave until warmed through.
