Description

Get ready to indulge in the most delicious and addictive snack ever – Blueberry Yogurt Clusters! These little bites of heaven are the perfect combination of creamy yogurt, juicy blueberries, and crunchy decadent chocolate that you can enjoy guilt-free!


Ingredients

  • 2 cups fresh blueberries – rinsed and dried
  • 1 cup Greek yogurt – any Greek yogurt you like
  • 10 ounces dark chocolate
  • Sea salt – optional for topping

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a mixing bowl combine the 2 cups of blueberries with the Greek yogurt and mix well to coat all of the blueberries in the yogurt. Note: Add one tablespoon of honey if needed for plain Greek yogurt.
  3. Use a spoon or cookie scoop to place small clusters of the yogurt-blueberry mixture onto the lined baking sheet. Place them about 2 inches apart so they are not touching. I created 6-8 clusters which were the perfect size. 
  4. Place the baking sheet with the yogurt clusters on it into the freezer for 20-25 minutes, until they are frozen solid.
  5. In a microwave-safe bowl melt the chocolate in 30-second intervals until it is mostly melted then remove and stir to melt the rest of the chocolate until silky and smooth. Let the chocolate rest for 5 minutes.
  6. Remove the yogurt clusters from the freezer and carefully dip each one into the melted chocolate using a spoon or fork to help coat each one, then place them back onto the lined baking sheet. Continue until you have coated all of the clusters. Top with a pinch of sea salt, if desired. 
  7. Let them sit until the chocolate hardens and enjoy!

Notes

  • In order to dip the yogurt clusters into the chocolate, they must be frozen solid. This may take more than 20 minutes if you made them in the larger size.
  • Letting the chocolate rest for a few minutes after you melt it will help the clusters stay together as you dip them. 
  • Don’t make the yogurt clusters too big. This recipe should form about 6-8 even-size clusters.
  • Store any leftovers in the refrigerator for up to 5 days.
