Description

This viral 2-ingredient yogurt cheesecake is a light, creamy, protein packed treat you are going to love! It is made with 2 simple ingredients and is a no bake healthier cheesecake that mimics traditional cheesecake that is addictive and so good!


Ingredients

Scale
  • 1.5 cups vanilla Greek yogurt – like Oikos
  • 6-7 Biscoff cookies 


Instructions

  1. Spread Greek yogurt between 1-2 dishes in an even layer. Note: make sure to leave a little room on top since the yogurt pushes up once you add the cookies. 
  2. Press the biscoff cookies into the yogurt in a row so they are evenly spaced apart. If you have more room, break up any remaining cookies and press them into the sides. You want the cookies to go as much of the way through to the bottom as possible. 
  3. Sprinkle some crushed cookies on top if you’re feeling fancy. Cover and chill the cheesecake in the fridge for 5-24 hours, until the cookies have become nice and soft. 
  4. When ready to eat, run a spoon across the top and enjoy!

Notes

  • Use a nice thick Greek yogurt that is flavored like vanilla. 
  • Press the cookies all the way through the yogurt, making sure you can still see the tops of the cookies. 
  • Do not over sweeten the yogurt if using plain yogurt since this healthy cheesecake recipe is meant to be light. 
  • Chill until the cookies become nice and soft. 
  • Enjoy within 2 days of making.
