Description

This Italian grinder salad is a spin on a traditional grinder or sub but without the bread. It combines crisp lettuce, chopped cherry tomatoes, a trio of deli meats, creamy Swiss cheese, banana peppers, and onion all tossed in a zesty Italian dressing. Making this the salad of all salads!


Ingredients

For the Grinder Salad 

  • 4-6 cups chopped romaine lettuce
  • 1/2 cup sliced cherry tomatoes 
  • 1/2 cup chopped deli ham
  • 1/2 cup chopped deli turkey 
  • 1/2 cup chopped deli salami 
  • 1/2 cup chopped swiss or provolone 
  • 2/3 cup sliced purple onion 
  • 2/3 cup banana peppers

Italian Grinder Dressing

  • 1/4 cup red wine vinegar
  • 2 tablespoons dijon mustard
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup extra virgin olive oil 

Optional additions

  • Texas toast croutons
  • Grated parmesan cheese


Instructions

  1. Arrange all of the salad ingredients (lettuce, tomatoes, onion, peppers, meats and cheese) in a large salad bowl. I recommend using a shallow salad bowl so you can see all the beautiful colors. 
  2. Combine the salad ingredients (red wine vinegar, dijon mustard, maple syrup, garlic powder, Italian seasoning, salt and pepper)  in a small bowl and whisk well to emulsify while streaming in the olive oil until fully mixed. 
  3. Pour the dressing evenly over the salad and toss to coat everything. 
  4. Top with grated parmesan cheese and croutons if desired. 
  5. Serve and enjoy!

Notes

  • Lettuce – use romaine or iceberg lettuce. 
  • Dairy free – omit the cheeses or use dairy free cheese. 
  • Vegetarian – omit the meats and sub in crispy chickpeas and hard boiled eggs.
