Ingredients
Scale
For the meatloaf
- 1 lb, lean ground beef – I used 90/10
- 1 large egg
- 1 tablespoon Dijon mustard
- 3 tablespoons ketchup
- 1 teaspoon Worcestershire sauce
- 1 medium onion – diced
- 3 cloves of garlic – minced
- 1/2 cup gluten-free breadcrumbs
- 1 tablespoon dried parsley
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
For the tomato glaze
- 1/2 cup ketchup
- 1 tablespoon maple syrup
- 1 tablespoon brown sugar
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat the oven to 350 degrees F and line a loaf pan with parchment paper. Then spray the pan with cooking spray to prevent sticking.
- Add all of the meatloaf ingredients to a large bowl and mix well to combine using your hands or a fork. Make sure not to overmix.
- Form the meatloaf mixture into the bottom of the loaf pan in an even layer.
- Bake for 45-60 minutes, until the internal temperature, reaches 160 degrees F.
- Mix up the glaze by combining all of the glaze ingredients in a small bowl. Then spread the glaze all over the top of the meatloaf.
- Increase the oven temperature to 400 degrees F and return the glazed loaf back to the oven for a few more minutes to get the top and edges slightly crispier.
- Remove the meatloaf from the oven and let it cool for a few minutes. Then lift it from the pan, place it onto a cutting board or plate and slice and serve it hot with your favorite side dishes.
Notes
- Don’t overmix the meatloaf mixture. Mix until the ingredients are just combined.
- Line the pan with parchment paper to easily lift the meatloaf from the pan once it is done cooking.
- Cook the meatloaf until the internal temperature reaches 160 degrees F. You can check this using a meat thermometer inserted into the thickest part of the meatloaf.
- Storing – store fully cooked meatloaf in an airtight container in the refrigerator for up to 3 days. Freeze in a freezer-friendly container in the freezer for up to 2 months. Defrost in the refrigerator overnight then reheat when you are ready to enjoy it.
- Reheating– you can reheat portions in the microwave or in the oven until warmed through.
