Epic Loaded Air Fryer Baked Potatoes

Description

Air Fryer Baked Potatoes have become a meal staple in my house since it is literarily the best method for cooking a baked potato. The air fryer does all of the work for you, it’s basically magical how crispy on the outside and fluffy on the inside these potatoes become. Top them with Broccoli and cheddar and a sprinkle of cooked bacon and you have one perfectly healthy dinner!


Ingredients

  • 3 russet potatoes – preferably similar in size
  • 1 tablespoon avocado oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 cup steamed broccoli
  • 3/4 cup shredded cheddar cheese
  • 2 pieces cooked turkey bacon

Instructions

  1. Prep the potatoes by scrubbing them really well then rub them with oil and season the outside of each potato with salt and pepper. Pierce each potato all over with a fork then place them about 1 inch apart in the air fryer.
  2. Cook the potatoes at 360 degrees F for 25 minutes, flip each one over and cook them for 20 more minutes. If you are using smaller potatoes then you will need to adjust the cooking time.
  3. Open the air fryer when they are done and slice them each down the middle immediately and squeeze the sides and use a fork to pull some of the potato away from the skin to make a nice bed for the filling. Then add a pat of butter to the center of each potato, if desired. 
  4. Leave the potatoes in the air fryer basket and fill each one with some steamed broccoli and some shredded cheddar cheese. Place them back into the air fryer and cook them at 350 degrees for 2 minutes to melt the cheese. Top each one with some chopped bacon and a sprinkle of ground black pepper and enjoy!

Notes

  • This recipe was created using russet potatoes. Sweet potatoes also work.
  • Try to select potatoes that are similar in size for even cooking times.
  • Make sure to season the potatoes and poke them all over with a fork before cooking them so they have great flavor and venting for the steam.
  • Slice them and fluff the inside right after they cook.
  • Check them while they cook to make sure they do not over cook.
