Description

This ground turkey sweet potato skillet is an easy one-pan meal packed with protein and fiber. It is made with ground turkey, sweet potato, peas, and cheese in under 30 minutes for a simple, healthy meal the whole family will love!

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup diced onion
  • 2 cloves garlic – peeled and minced
  • 1 teaspoon Italian seasoning
  • 2 cups diced sweet potato
  • 1 cup frozen peas
  • 2/3 cup grated manchego cheese
  • Fresh chopped parsley – optional for serving

Instructions

  1. Preheat the oven to 425°F.
  2. Heat a cast iron skillet to medium heat on the stovetop. Then add the oil.
  3. Add the ground turkey to the pan, breaking it up in the pan, then season it with salt and pepper. Toss and cook it for a few minutes. Then add the onions and garlic.
  4. Toss everything together and cook until the onions become translucent, about 2-3 minutes. Then stir in the Italian seasoning and more salt and pepper, to taste.
  5. Add the sweet potatoes to the pan and toss them with the ground turkey mixture. Add 1-2 tablespoons of stock or water if the mixture looks dry. Cover the pan and cook for about 5 minutes until the potatoes are tender. Then add the peas, cover, and cook the mixture for 2 more minutes.
  6. Top everything with the cheese in an even layer, place it on the top rack of the oven, and bake for about 5 minutes, until the cheese is melty and bubbly.
  7. Once it is ready, remove the turkey sweet potato skillet from the oven, top with fresh herbs, serve, and enjoy!

Notes

  • I used 93/7 ground turkey for great flavor but any ground turkey will work. You could also use ground chicken or ground beef.
  • I recommend using at least a 10-inch cast iron skillet.
  • Leftovers can be stored in an airtight container for up to 4 days. Reheat portions in the microwave until warmed through.
