Cottage Cheese Cookie Dough

Description

This edible cottage cheese cookie dough is the best healthy treat! It is made with cottage cheese, peanut butter, oat flour and protein powder and is packed with protein. Plus it is an easy egg-free, gluten free, refined sugar free dessert that you can enjoy every day! You are going to LOVE IT!


Ingredients

  • 1 cup cottage cheese
  • 2 tablespoons creamy peanut butter 
  • 1-2 tablespoons maple syrup – see notes
  • 1/2 cup oat flour or almond flour
  • 1/2 cup vanilla protein powder – I used Clean Simple Eats brand
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips – I used Lily’s brand 
  • Flaky sea salt – optional for topping 


Instructions

  1. Add the cottage cheese, peanut butter and maple syrup to a high speed blender and blend on high until fully combined. Add the blended cottage cheese mixture to a medium size mixing bowl. 
  2. Add in the flour, protein powder and vanilla and mix well to fully combine into a thick cookie dough. Note: if the cookie dough base appears to be too runny then add more flour, if it appears too thick then add more cottage cheese or 1-2 tablespoons of milk (any type). 
  3. Fold in the chocolate chips. 
  4. Serve or chill and enjoy!

Notes

  • The protein powder you use matter’s since some are more dense than others. I tested this recipe with Clean Simple Eats brand (more smooth and runny) and Orgain brand (thicker and chunkier). 
  • You can choose to blend the cottage cheese or not. I found the cookie dough was easier to mix and had a better texture when blended. 
  • Add an extra tablespoon of maple syrup if you are using a protein powder that is less sweetened. 
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
