Description

Brownie Baked Oatmeal is a delicious healthy treat you can enjoy for breakfast or a satisfying snack! This baked oatmeal recipe is made by combining oats, cocoa powder, banana, maple syrup, vanilla, and dark chocolate chips for a guilt-free dish that is loaded with fiber and nutrients. Plus, it is gluten-free and dairy-free!

Ingredients

Scale

Dry Ingredients

  • 2 + 1/4  cups old-fashioned rolled oats
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt

Wet Ingredients

  • 1 ripe banana, mashed – about 1/2 cup
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1.5 cups milk – I used unsweetened soy milk
  • 2/3 cup dark chocolate chips – plus more for topping the oatmeal

Instructions

  1. Preheat the oven to 375°F and spray an 8×8 pan or casserole dish with cooking spray to prevent sticking.
  2. Mix the dry ingredients in a large bowl.
  3. In s separate medium bowl mix the wet ingredients.
  4. Combine the wet ingredients with the dry ingredients and mix in the chocolate chips
  5. Pour the oats mixture into the prepared baking dish in an even layer and top it with more chocolate chips, if desired.
  6. Bake the oatmeal for 25-30 minutes until it is set in the middle and around the edges.
  7. Remove it from the oven and let it cool for at least 15 minutes before you slice and serve it.
  8. Serve warm with a drizzle of peanut butter and sea salt.

Notes

  1. Make sure you use rolled oats and not steal-cut oats.
  2. It is important to let the baked oatmeal cool since it will firm up as it cools before you serve it.
  3. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat portions in the microwave until warmed through. You can also reheat the oatmeal in the oven at 350°F.
