Baked Boneless Chicken Thighs

Description

Quick and delicious oven-baked boneless chicken thighs perfectly seasoned with a rich, tangy BBQ sauce and baked until golden and flavorful. This chicken thighs recipe will become your go-to during the week with minimal prep and cleanup!


Ingredients

  • 68 boneless skinless chicken thighs – 1.5-1.75 ounces
  • 1 tablespoon olive oil or olive oil spray
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2/3 cup BBQ sauce

Instructions

  1. Pat the chicken thighs dry with a clean paper towel and place them into a large bowl. Toss them in some olive oil
  2. Mix up the seasoning (garlic powder, paprika, onion powder, mustard powder, salt, and pepper) and rub it all over the uncooked chicken. 
  3. Then toss the chicken in 1/3 cup of your favorite BBQ sauce. At this point, you can cover and marinate the chicken thighs for 1-24 hours, or bake them right away. 
  4. Preheat the oven to 425°F and spray a medium-sized baking sheet with cooking spray. Place the seasoned chicken thighs onto the baking sheet and bake them on the middle rack of the oven for about 25 minutes until an instant-read thermometer registers 165°F. 
  5. Remove the chicken from the oven, let it cool for 5 minutes, then brush each piece with more BBQ sauce. 
  6. Serve and enjoy!

Notes

  • I used 8 boneless skinless chicken thighs. You can also use bone-in chicken thighs but they may need to cook slightly longer. 
  • If your chicken thighs are different sizes, don’t worry, just cook them until the largest ones are fully cooked. They will all still turn out juicy and delicious. 
  • Choose any BBQ sauce you like. We used a gluten-free BBQ sauce to keep this recipe fully gluten-free. 
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. 
  • Reheat portions in the air fryer, oven, or microwave until fully heated through.
