- 1 large egg
- 1/4 cup blanched almond flour
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup diced red onion
- 2 tablespoons fresh chopped parsley
- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 1 tablespoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat the oven to 425 degrees F and line a baking sheet with parchment paper or foil.
- Add all meatball ingredients to a bowl and mix them all together until fully combined.
- Use an ice cream scoop or spoon to portion and roll the meatballs in even size balls that are about 1-1.5 tablespoons each.
- Place the rolled meatballs onto a lined baking sheet in a single layer (with none overlapping)
- Bake them in the preheated oven at 425 degrees F for 12-15 minutes.
- Remove and serve with cool tzatziki sauce and cucumber tomato salad. See more serving suggestions below.
Notes
- Use good quality ground turkey or beef – I used 93/7
- Chop the herbs, onion and tomatoes into small pieces so it is easier to mix and roll them in with the other ingredients.
- If you cannot have almond flour then you can use gluten free breadcrumbs instead.
- Feel free to add some mint or crumbled feta cheese for even more dynamic greek flavors.
- Check the meatballs at around 12 minutes of baking to make sure they do not overcook.
- You can store these meatballs after cooking in an airtight container in the refrigerator for up to 3 days.
- To freeze these meatballs: Roll the mixture, place the rolled meatballs onto a baking sheet and transfer them into the freezer for about an hour. Remove them and place them into a freezer-friendly container and keep them in the freezer for up to 2 months. When ready to cook, let them sit in the refrigerator overnight then bake as directed.
