VEGETARIAN STUFFED ACORN SQUASH

Prep and cook the squash: Cut the squash in half, scoop out the seeds, roast the squash until fork tender. 

Make the filling: Sauté the veggies, and add the rest of the ingredients. 

Stuff the squash: Fill each half of squash with some of the filling and cook for a few minutes to brown the tops .
